Aw, too bad you won’t be coming to Jersey! I could have brought you to Franklin Lakes to see if we’d get a glimpse of the Real Housewives. lol. That show cracks me up. I’m a Jersey girl myself – but I am so far from how they are on the show. 🙂 Theresa is my fave as well. I can’t stand Danielle either!

I have a question about becoming a vegetarian. I want to cut down on beef and poultry – but would still like to consume some amount of fish, eggs, and dairy.

I have tried slowly to replace/incorporate certain things. For example, coconut milk. So Delicious just came out with coconut milk in a carton, and I have been using that in place of my Skim Plus Lactose Free. What are the benefits to using coconut milk instead of cow/soy/almond/rice milk?

I am concerned about not getting enough calcium. But, someone recently told me that you can get all your calcium from vegetables. Is this true?

    Thanks, Kath!

    Good morning, Kath!

The Summit sounds so exciting. Boston is beautiful 🙂

I thought I would share this tidbit with you. Not sure if you already know this. So I know you LOVE oatmeal, but now that it’s getting hot, the last thing you want is a hot breakfast. Well recently, I’ve been adding frozen fruits to me bowls. The other day I just took from cherries I had on hand, de-pitted them, and stuck them in the freezer. Next morning I made the most delicious bowl of oatmeal (I’m gonna post the recipe on my blog later, I’ll let you know), and it was cooled down by the frozen fruit. So you can still have oatmeal in the summer without breaking a sweat!

Take care, and I hope you have a wonderful weekend.

    Suzanne ,
I don’t really know the benefit comparison between coconut milk and other milks. It depends on the sugar, protein content and calcium content, so look at the labels and judge those.

It’s pretty hard to get calcium from vegetables because it is much less bioavailable than from dairy and animal sources. I would recommend a supplement if you’re going to be 100% vegetarian. But if you still include milk and yogurt and fortified milks, then you’ll be better off.

    Katharina ,
If I didn’t have really sensitive teeth to cold, I would love that!

    Blair ,
    Thanks for de-lurking!

    Lydia
I LOVE Boston, but it’s way, way, way, way too cold for me.

    Serena ,
We are likely going to open registration on a weeknight at 9pm so east and west coasters would be more available. It may be a wild evening. I wish we could have afforded to do 500 people 🙁
