Thanksgiving In July

Got out of class early!!! Whoo hoo!! I’m really wrapping up this summer session fast. Tomorrow is a fun Sports Nutr class (turning in and discussing our athlete analysis projects) then I have a test , which is always fun because you get out of class early! Then I’m skipping lab in favor of the Americana Symphony ! I’m finished with all of my papers and just have 2 tests and 2 finals left , plus a take-home chem test . I can smell freedom!

I did have Lunch III today around 2:30 – plain  yogurt with wheatberries and freeze-dried lime-pineapple !

I got these Funky Monkey JiveaLime pineapples as a sample to try and they are really cool. I know this is gross, but I kind of like how they stick in your teeth. They aren’t all airy like other crunchy fruits – they have some good substance. And taste fresh too. I had half the bag –

And I did spoil my dinner. I wasn’t terribly hungry, but I had to eat, so I did. I made the best wrap! I’m calling it a Thanksgiving Wrap :

  • 1 slice turkey
  • 1/2 cup pumpkin with a touch of Splenda
  • Schmear pesto
  • Spinach

LOVED the sweet-savory combo. And how heavy it was from the pumpkin.

And had some Quackers !!

    Hey Kath! Way to go on your classes coming to the finish line… wahoo!

    What wraps do you use?

    Does anybody make green smoothies? I have been experimenting with them lately. Today I made one with

    2 frozen bananas
    big handful fresh spinach
    cup water

    It was actually good! I split it with my friend and we were laughing that is tasted good… although slightly wierd thinking about it.

    Also… one more question. Does anybody with belly issues (like no dairy people) every try to eat the plain greek yogurt? Does it bother your belly?

    Kath, I tried wheatberries for the first time today! I made a recipe from Epicurious.com called Feta Wheatberry Salad, served with baked salmon, and it was delicious. I’m anxious to try them in my yogurt, and with oats too.

    Wow, that IS a big apple! And I love that little handled baker. Is that from C&B? If so I’ve been EYEBALLING those for the longest time. want to get them so bad and this post is giving me a good excuse to use them. 🙂
