Super Delicious Lunch!

Pretty good lunch for a Monday 8)

So at the grocery store yesterday I wanted to get some deli meat to make sandwiches. Of course I’d like to buy organic but I was also trying to meet our budget for the week (under $75) so I had to consider all options:

1) Super expensive $5.99 organic.

2) On sale $3.99 roasted turkey (not organic, not even all natural but no nitrates)

3) The vegetarian Smart Deli line: $2.99.

So since the Smart Deli seemed to be the best balance of health and cost I decided to give it a try. No, I am not going vegetarian, but given the options, this one won. I think I would prefer to eat organic turkey than this on a regular basis though. I mean, although it’s vegan and the only real drawback is the increased amount of sodium, it is processed and I’d rather have just “organic turkey breast” in my ingredients list over the long list of ingredients (natural or not) on the Smart Deli if I’m trying to eat whole foods.

But the Smart Deli Ham was quite good! I can see how others would think it was gross, but I liked it. Especially on a delicious doughy potato bun with a Laughing Cow cheese (you might not think to spread these on sandwiches but I think the thick globs of creamy cheese are much better than a thin slice of swiss, cheddar, etc. that you can barely taste), jalapenos and dijon mustard.

Quite a good sandwich indeed!

Leftover Jenna’s Mom’s Cabbage. It was better today than the other night! Jenna was right about picking at this in the fridge 🙂 Oh, and I FOUND A MICROWAVE!! Yay!! That means I can bring hot things on Mondays when I eat here in the union. I gave me cabbage 30 seconds and it was great.

Pumpkin yogurt (Today’s combo: 1/2 cup pumpkin and 2 oz plain yogurt with cinnamon and NO SPLENDA!)

And a kiwi, which I sliced with a knife when I got to campus for easy transport. Yes, I eat the skin. It’s great!! Nice and chewy 🙂

AND I got a hot peppermint tea and did not add sweetener. Just milk. Peppermint is one of the few teas I can drink without sweetener so maybe I just need to switch my brands around.

Lunch was about 530 kcal, 14 grams fiber and 24 grams protein.

My oatmeal pancake breakfast held me over fabulously!! I might have even been less hungry than oatmeal days, but I also didn’t burn 400+ calories before eating, so that was probably a big factor.

I’m off to study for my exam! I think I’m going to take my flashcards for a whiz around campus to get my energy up and some fresh air 8)

    I had almost the same sandwich. The husband’s potato bun (I love these! And I made his bagels yesterday and love those, too) plus smart deli pastrami, laughing cow cheese, pickled carrots and baby spinach. Yum.

    Thanks everyone for the morning exercise comments! I have one more questions if you all don’t mind, but what do you eat (if anything) before and after? I find oatmeal takes forever to make/clean up!

    Kath, regarding deli meat: I like to have them on hand for sandwiches, too, but I’m like you and don’t want nitrates, prefer organic, etc. I ended up just buying a small turkey breast a couple of weeks ago that I roasted and sliced up. I ended up slicing only about 1/2 of it and then just froze the rest. It tasted a million times better than regular deli meat.

    Sorry to disappoint, but I eat oatmeal for breakfast! I don’t find it to be time consuming at all! I use the rolled oats and just make them in the microwave (being sure to watch it and make sure they don’t bubble over)! I can’t tell a huge difference between this and stovetop, so I just use the microwave. And it’s only one bowl to clean up!
    Anyway, to answer you question, I eat oatmeal before my workout and a banana with peanut butter afterwards. Little backwards from what most people do, but I have no problems with the oatmeal first thing…and it helps get me out of bed because I love the oatmeal so much! 🙂

    Leigh – Typically I don’t eat anything before a morning workout but this morning I had half of a Clif bar. I didn’t notice too much a of a difference in my energy level though. Post-workout I’ll either eat yogurt with fruit, kashi and flax or quick scrambled eggs and a cup of tea.

    i love eating kiwi with the skin on too! extra fiber maybe??

    I only work out in the morning on the weekends and when I do that I have a small snack before hand (a piece of ezekiel bread with almond butter and honey) and a big bowl of oatmeal after. when i do my long runs on saturday mornings, i eat half a clif bar the second I get up, wait about 45 minutes and then eat a banana on my walk to the subway to my running locale. After, a big bowl of oatmeal (of course!)

    I know some people don’t like oatmeal this way, but I make it in the microwave. Half a cup of old fashioned oats, one cup of water, and a thinly sliced banana if I want one. Microwave for 2 or 3 minutes in a big bowl to prevent overflow, then add anything else I want (milk, flax, etc.)

    And perhaps grosser still, I eat half before a morning workout and save half on the countertop, which I then top with peanut butter or almond butter after the workout. For some reason, I don’t like nut butters hot, but with the room temperature oats it tastes great to me. Yes, I’m strange, and I must admit, convenience is a huge factor for me with two little kids.

    Kath- how did you like the pumpkin yogurt without any sugar or Splenda? I can’t imagine it that way. I like mixing pumpkin with vanilla pudding as a dessert.

    That’s a great idea to let the oatmeal reach room temperature before adding nut butter to it. I absolutely hate peanut butter on hot oatmeal which is weird because pb is one of my favorite foods. I think I may have to try your method sometime. I’m glad you posted that. 🙂

    Kath or anyone who might be able to help…

    I just checked my body fat w/ a body fat analyzer thing…you type in your weight, height, age and roughly hor much you exercise…and hold it in your hands for however long and it determines your bmi and your body fat %. It’s the most accurate besides the method when you pinch the fat on your body etc (my gym does both). Well…I’m 5’7″, 23 and weigh around 120-123. My bmi was normal but my body fat% was a whopping 13%! I know on average for a woman’s body to be functioning properly (i.e. menstrating) the minumin body fat she should have is 17%. I’m currently on BC so I’m not sure if my body would naturally be producing a period.

    The thing is…I eat ALOT! and not all healthy food…I have a dessert everyday night after dnner and I snack in between meals and roughly eat arounf 2000 cal. My body feels great! Could someone’s body be functioning properly with a body fat of 13% for my height and age? I only exercise 3-4 times a week. I’m tempted to go of BC for a couple of months to see if I’m ok but it’s going to be a hassle b/c I’m married and don’t want little babies running around yet! lol

    I would just like some thoughts from anyone who might be able to give me some insight!!

    I’m going to the gym tonight and will be trying to use the other method of measuring my body fat with the pinching process to see if it’s more accurate etc.

    One of my favorites teas is the celestial seasonings almond dessert tea. It is hard to find in regular grocery stores, but I find it atan organic market near me called Roots. T I heat up a little unsweetened vanilla amond milk in the microwave for 30 seconds and then add the tea bag and boiling water. It is just the right amount of sweet and I find not only do I not need sweetener in it, it also curbs my sweet tooth (hense the name dessert tea, I suppose!).

    LisaR – I am 5 ft 4, 115 lbs, and my body fat is 13%. I think that’s at the line of “Excellent” body fat (according to my gym’s tracker).

    You mightj ust have one of those great metabolisms that burns everything efficiently and. Are you lifting weights when you do go to the gym? 3-4 times a week is plently for most people to maintain, unless you are trying to lose weight. Perhaps the reading is accurate. I am the same height and weight, but 31 years old, and I do not know my body fat percentage. (I dont think I want to know!!) But my doctor says my weight should not go below 119 not only for my health and because we are thinking of conceiving in the near future. So I use that number as my guage. When I am under stress I tend to drop pounds out of no where, so he recommended during those times to add something like “ensure” each day to make sure that I am getting all my nutrients and add some additional calories. I am no expert but from someone with a similar build, I dont think you have too much to worry about.

    haha! sry! it’s just that I really don’t think you should worry AT ALL about BMI (especially whatever # those “testers” tell you). BMIs really are NOT accurate. Many just relly on simple #s that you feed them (such as height, weight, etc.), others-like the pinch test, include muscle mass w/the fat count. What these tests never take into account is the person actual body structure (denser bones, more muslce, etc.) When I was anorexic (I looked a LOT worse than the models you see in magazines) I was 5″6 and weighing in at 115lbs; the BMI test my doctor gave me said my BMI was 23. I was in that anorexic mind frame where I believed my body was so much bigger than it really was, so I was like “See? I really DO need to lose weight!” but my doctor told me that these tests were not the most accurate, and that I needed to GAIN a good 20lbs (you could see every bone in my body). Now I can see how skeletal I was 10lbs ago, when the test said my BMI was 23. That’s why I don’t believe in any of those “tests” and think you should just go by how YOU feel in your body. You (or others around you) will know when you’ve gone to far.

    Oh! Kath-I forgot to tell you that I ordered the HRM off of your Amazon page and am enjoying it! The only downside is that CalorieKing was OVERESTIMATING my caloric expenditure! So now I’m a little disappointed when the HRM says less than CK. Ahhh… the price we, the over-organized perfectionist types, pay for accuracy in everything we do : )

    Ana…well I wasn’t as concerned about my BMI as I was about my Body Fat% (they’re two different things). And the machine I use is one of the most accurate one’s out there besides the pinch test. I’ve never worried about it before until a close friend who is a few inches shorter and had a similar % of body fat had many problems with her body functioning properly so I’m just making sure I don’t get to that point granted everyone’s body is different…i was just curious what others might have to say.

    those hand-held fat analyzers are not the most accurate. caliper tests are better if taken by someone who is well trained and taken over several tries from the exact locations on the body. or if you have the money body gem or immersion (or whatever the techincal term for dunkin’ ya in a tank).

    i know a lot of elite cometitive female body builders whose goal is 15% in the off-season and it is super super difficult to achieve. they get down to 10-12% through super strict, clean eating and intense lifting.

    and bmi can go up as fat goes down. mine’s up to 20. something but my fat has gone from 23% to 17-18% as my weight went from 95- 103-5 depending on time of month/day/etc. i’m a science nerd so here’s an equation: Fe(w)^x + t
    -> m(-g) + m(g). 🙂 or in english increasing the iron you pump over the course of time yields decrease in mass (fat) and increase in muscle mass. haha. that probably makes no sense at all. i’ve been in chem class too much this semester.

    Ive heard the hand-held body fat analyzers are not accurate too. Even calipers can vary alot. the most accurate test is the Bioelectrical impedance analysis (BIA) (under water)….its the really only sure way you can figure out your body fat.

    Does anyone know what 2oz of yogurt measures out to?

    I actually just bought that tea not too long ago when it went on sale. It’s pretty good…not too sweet on it’s own (I add a little Stevia). But it smells EXACTLY like sugar cookies! Yum 🙂

    Re: flax

    I don’t think ground flax really has a taste, just a texture. Whole seeds taste like walnuts, but whole seeds aren’t nearly as good for you. I know some people say they mix ground flax into their cereal or coffee, but be aware that it doesn’t dissolve. It floats on top, which I can’t handle.

    If you’ve never tried flax, I recommend stirring it into denser foods first, like oatmeal or mashed potatoes, or maybe even yogurt. It’s not as noticeable in those foods. I’ve grown to like it, but it took some experimenting.

    Polenta advice puhhleez…

    Hi everyone. So, I bought a role of organic green chile and cilantro polenta at the store. I’m baking some chicken (seasoned taco style) and I want to have the polenta with it. I already sliced it up but I’m not sure if I should bake it or cook it in a skillet. Also, what else would go with this meal? It’s just for me and the hubby so the main protein will be the chicken and we’ll each have half the polenta roll. I was thinking about sauteeing some onions and peppers and green beans to throw in the mix for veggies. Any other ideas?

    Two questions for Kath or anyone else:

    1) I want to make the kale and butternut squash soup but I’m vegetarian and was wondering what I could sub for the turkey as a protein source – If nothing then I guess I’ll just make it with just the kale + butternut squash

    2) this might have been asked already but not sure…I don’t want to purchase the HRM and was wondering if the calories burned that you read on the elliptical, treadmill or stairmaster machines are around the same as that on the HRM. If not, what would you say is the difference – 10, 20%? Thanks!

    Just wondering, Kath and Jenna (and other vegan bloggers), have you tried Indian food?
    Kath, you seem to like using spices and hot sauce and natural ingredients.
    Did you know that Indian food is very “real” since it costs way more to buy processed food vs natural foods?
    Also considering that around 70% people eat vegetarian food almost everday, it has a lot of variety in cooking vegetables and beans. Unlike the stuff they serve in restaurants, it is not fattening (just like any other cuisine, its about making the right choices).

    P.S I had a big glass of decaf green tea, a bowl of steel oats, blueberries, cinnamon and a scoop of PB this morning at 7:30. I was STARVING at 10:00!!! That has NEVER happened to me , especially when I eat oats. How odd?!?!?!?!!

    I am baffled…

    Professor did get back to me but she wants to meet the 14th-I am working!! argh

    Don’t you compare your price by ounce? These prices don’t mean anything unless they were all exactly the same size. I really doubt that vegetarian lunch”meat” is cheaper than turkey.

    I’ve cooked polenta both ways (bake or saute) with a lot of success. When I bake it, I put it in for about 10-15 minutes (you may want to put it in for a little longer if it’s cold), then take it out and put a bit of cheese on it while the broiler is heating up, then put it under the broiler and WATCH CAREFULLY until the cheese is browned.

    The peppers and onions on the side sound good. I really like spicy black beans, though!

    nadia- if you’re at the gym and enter in your weight you can average out how much you might have burned but usually I guess a little less than what the machine says…otherwise I google a site that estimates that kind of stuff for you based on the time, weight, etc

    I was wondering the same thing about measuring the faux deli meat prices against the real thing. I just figure that buying a pound of organic thinly sliced turkey for 10 dollars is worth it. I suppose it depends on your budget, but our weekly grocery budget is about the same as Kath and Matt’s. Plus, you know, another 60 dollars for wine.

    Hello and happy Monday everyone! I bought a HRM monitor last week, Polar F6, and it gives me a higher reading than the machine. Everything I have ever seen talks about the machine over estimating, but today, for example, after my treadmill workout, the machine said 280ish and my HRM said 345?? I would assume to go with the HRM reading but I am a little baffled and was wondering if this ever happens to anyone else??

    Sonia. I completely love Indian food/ethnic cuisine. My grandmother has Indian neighbors who always bring over the most delicious food/curries etc. Her neighbor had the most beautiful traditional indian wedding and it was like something out of a storybook/the catering very unique. When dining out, I’d just be careful of the korma, creme sauses. Ever had a mango lassi? SO GOOD. I’ve given up meat completely at this point; not so much an ethical thing/my husband is and remains a carnivore; I just can’t stomach it.

    I was just wondering how you came up with your weight training routine. Did you meet with a personal trainer, follow a magazine, or do you just do what you feel like? I would like to start weight training more but sometimes I get intimidated by all the machines at the gym and never know what to do!

    I second (third?) the Indian food recommendations!

    Did you know Curry is a powerful antioxidant? I sprinkle it on my spagetti squash with pepper and it’s great.

    About HRM- I think Kath said her’s tends to overestimate about 50-75 cals?? But I’m not sure if this is when she is inputting her weight and age (it makes it slightly more accurate).

    When I workout on the treadmill I always enter my age and weight, and then if it says I burn 350, I usually estimate my burn at around 275 just to be sure.

    HOLY FOOD COMA….it’s our spring break & I came home a few days ago and am about to pass out from the excessive amount of CRAP that i’ve been eating…it’s really like i can’t STOP!!! I think it’s b/c back at school, our pantry/refrigerator is mainly natural, whole, healthy foods and now I’m utterly bombarded with insanely delicious & horribly unhealthy food….and i’ve turned into a gluttonous pig – just stuffing my face b/c i can – not even savoring or enjoying the flavors.     Also I love kiwi-skin. People think I’m gross but I’m so with you – chewy and healthy.
    I’m going to have to get me some almond butter. Have you tried ABC or cashew spread? I cant decide which I want to try first!

    Nadia, re – the soup question (I’m also a vegetarian) and I think that TVP (Textured Vegetable Protein – doesn’t sound too tasty) is probably one of the best bets for replacing meat in a stew, as it really holds its texture. TVP is available at most health foods stores – it looks like little brown, grain pebbles – and often comes in two sizes: one that is small (as in rice crispies or smaller) and then a size that reminds me of dry dog food. It doesn’t have much flavor on its own, so it’s great for flavorful recipes. You could, of course, try a firm tofu as well, although it will likely crumble/break down (you could just blend silken tofu in, so it has a creamy texture all around).

    Finally, you could always just top it with greek yogurt or a handful of toasted nuts (walnuts sound good to me)!

    I’m not sure what you mean by WF or EF sushi? Do you mean sushi from Whole Foods or EarthFare? I can’t say I’ve had either.

    I always eat something small before my workouts and something big after (except on “inverse workout days” when I have a big breakfast at 7 and workout at 9!). Before my early workouts I like toast with jam or peanut butter. Sometimes half a granola bar. Nothing heavy. The PB really helps the toast stay with me through the hour (along with 24 oz of water).

    We’ve been doing the roast-fresh-meat thing but we didn’t have any on hand, so I just went for the deli meat. Guess that is the most cost effective way to do it!

    I don’t mine pumpkin plain so it wasn’t a huge change. I didn’t really miss the splenda until I realized I was halfway through and didn’t have any. Guess it’ll just take a little getting used to. Pumpkin vanilla pudding sounds great!

    We used to average about $120. We’ve cut back and now aim for $50, usually hit $75, and are often closer to $100 per week.

    Tough question on my all time favorite tea!! I really have no idea because I find one I like for a while and then get sick of it. I REALLY like Celestial Seasonings Candy Cane Lane a lot. I also love Bigelow Egg Noggin’. And Yogi Egyptian Liquorice is GREAT because it’s naturally sweet. I love all of the Earl Grey’s too. And anything with vanilla in the title!

    Glad you like the HRM!! I do think CK overestimates some, but not as much as other calculators I’ve seen out there. It’s always better to guess conservatively. Red sounds fun 🙂

    The potato buns are about 3 oz and about 171 kcal each. I guess they’re about the size of a regular hamburger bun you’d find in a pack of 8 but flatter.

    The soup would be great without any protein. But you could add a can of white beans – we did that once and they were delicious in it.

    As for the machines, I think they overestimate by at least 25% – sometimes more depending on intensity and resistance. I like http://www.caloriesperhour.com ‘s calculators.

    I have had Indian food before and liked it a lot (my friend spend a semester in India and cooked for us so it wasn’t in a restaurant). There is one Indian restaurant here in CLT but unfortunately it’s pretty expensive so I have never gone. Otherwise, would you like to come cook for me!?

    I have done lots of reading (mostly magazines, I admit) on weight training and have a good basis of exercises that I do. I also used to take a few sculpt and boot camp classes where i learned a handful of exercises that I still repeat. I really just try to work each major muscle group in my upper body 3x a week – sometimes with free weights, sometimes machines, sometimes body weight. It depends on my mood, so I don’t really have a set routine.

    It’s there, but you DON’T HAVE TO PUT IT IN YOUR MOUTH!! It’s just food. You will still be here tomorrow if you don’t eat it. Remember, you may be on vacation but your body isn’t!

    a question on deli/lunch meat inspired by your lunch today —

    i used to enjoy a good deli sandwich for lunch too, but since i’ve had to start carefully watching my sodium intake, i can’t find a brand that has less than 20% of my daily sodium intake for a measly 2 oz! do you or any of your readers know of a “low-sodium” (or even “lower sodium”) deli meat? any brands you recommend?

    Our grocery store makes a store brand that is low-sodium. Have you checked that? Otherwise I’m not sure of any main brands, but I bet they all make them. I’ve seen 5-10% I think at Dietz and Watson?

    thanks kath! i live in chicago, so we don’t have harris teeter stores out here (is that the correct name for your supermarket?) but i’m glad to know that you’ve seen lower sodium deli around — i’ll definitely look more carefully next time i’m grocery shopping…

    I went to the grocery and they had a sample of there own brand peppermint green tea. I bought some and it is so good. I will be buying more. I drink a lot of green tea.

    I would love to cook for you sometime if I am on that side of the town or ur in Dallas. 😉
    I make a lot of Indian cuisine (my roots) but also a lot of other stuff cause like you, I love creating new recipes.

    Suggestion: Try blending yogurt with some cardamom, brown sugar or honey and mango leaving a little pieces of mango. Its amazing and really filling.

    Also since you like tea so much (honestly I cannot have any coffee at all, don’t care for the taste), try putting some cardamom, real tiny pinch in some hot water, also a tsp of ginger. It takes hot tea to a different level.
