Springtime Breakfast

Mango, Almonds, Weetabix + Swiss Yogurt

Drizzled with Honey and Flax

This is one of my favorite summer breakfasts – a big bowl of yogurt and fruit with fun toppings. I used to hate mango but it is currently my favorite fruit!!

We decided to hit the gym early this morning so I went to the 8 a.m. cycle class. I skipped my usual Friday class and was excited that my regular instructor was teaching today too! Class was challenging. I also did 15 minutes of weight lifting before class started.

Before we left I had a piece of beer bread toast with Smart Balance. Nothing like beer flavor in the early morning! (Dont worry, it’s very subtle 🙂 )

For breakfast I started with a swiss yogurt base (LOVE these – got it at Fresh Market). It’s realllllly creamy and almost runny – the opposite of Greek yogurt.

On top – a whole mango, a weetabix (I only like these on yogurt – in milk they get too soggy), 1 tsp flax, toasted almonds (I barely burned them in the microwave – yum!) and a drizzle of honey.

This breakfast was roughly 420 kcal, 8 grams of fiber and 16 grams protein.

I’m normally a shower-a-holic but today I just changed out of my sweaty cycle clothes and into dry old clothes because we’re headed out for some gardening! We’re going to plant lily and tropical flower bulbs and work on organizing things for vegetable planting (very amateur) in a few weeks. I can’t wait to have fresh FREE flowers (I just wrote flours by mistake!) to put around the house! We’ve already got some tulips rising from a fall planting!

    hi kath,
    do you have any good tips for me?? i ALWAYS feel like i need to have something extra or sweet after every meal even if im not hungry!! even if its something healthy.

    Haha! Everyday I eat cereal with fruit yogurt and a bit of honey if I’m in the mood. Of course today I’m all out of cereal so I’m all proud of myself for having a faux-KERF oatmeal breakfast. Then I come to find you have my cereal. Too funny!

    You mentioned planting vegetables. I live in Greensboro and am wanting to start a vegetable garden (something pretty small). Any tips? I have no idea where to begin. Thanks!

    I tried the baked oatmeal this morning, except I used a granny smith apple (out of bananas), and I used my perfect sized oatmeal bowl that I made in pottery class. Because I made it out of clay, it could go right in the oven! Perfect for single sized baked oatmeal. I can’t say I really loved the apple in there, I thought it would be more apple crisp-ish, but it was just blah. I can’t wait to try it with a banana, because the oatmeal itself was nice and crunch/creamy. I’d like to try it with sliced strawberrys in the summertime, or blueberries!

    Also, I’d like to get some opinons on egg salad. I make it pretty frequently for lunch, as its cheap and easy. However, I don’t really like the amount of mayo that has to go in, and sometimes I do add mustard just for extra flavor – but I’m wondering if I could go half mustard half mayo? Or would that be too intense. Also, what else do you all put in your egg salad – my bf isn’t too fond of celery in there but I like it.

    Betsy,

    I love egg salad, and all that I add is

    6 eggs
    1/2 a chopped or minced onion
    2 big spoonfuls of pickle relish
    1/4 cup of light mayo
    2-3 tbsp. of honey mustard
    2 tbsp. of horseradish mustard (this gives a great kick!)

    You can really play around with how much of these things that you add, like I do even less mayo and add more of the mustards.

    I love egg salad too. I’ve used plain yogurt to repalce some of the mayo and find it works just fine, especially if you add a little mustard to give it some zing!

    I have a box a weetabix and was actually in the need of ideas! That breakfast looks wonderful!

    Hi everyone. I’m looking for some tips to get back on track quickly. I just returned from Puerto Vallarta on a trip with my girlfriends (amazing!!). While I had a great time, I’m sure I gained 5-10 pounds since it was an all inclusive deal with buffet style food and open bar all day. I kinda lost control 🙁 Anyway, I would really like to lose this weight as soon as possible. I’m going to go grocery shopping soon, so some diet-friendly food suggestions would be much appreciated.

    That close-up is quite the picture Ms.Kath! And I wonder if you could throw those weetabix’s in the food processor and make some yummy chicken/fish coatings prebaking! I’ve got to try them soon! Hope you and THE HUSBAND have a wonderful saturday!

    Hey Michaela!
    Although I’m no dietician, I wouldn’t advise that you think of the FASTEST way to lose the weight, as that will most likely put pressure on you to resort to unhealthy actions.
    As Kath and others point out, if you return to your usual schedule of exercising and healthy eating your body will adjust much more smoothely than if you drastically restrict and add MORE stress. Our bodies are smarter than we think and very often all they need is a little reminder to get things back together!
    Try to drink lots of water (hot water with lemon is a natural cleanser for your whole system, and the lemon is delicious and such a mood lifter too! If you CAN, try to keep the PFs (processed foods) to a minimum so that your body is getting all of its complete nutrient sources. Most importantly, don’t be too hard on yourself! My grandma always says, “No body every said, ‘Darn, I wish I didn’t have that piece of cake’ on their death bed”!

    And I love the website http://www.worldshealthiestfoods.com! It’s a fantastic resource and should help you get back on track both physically and mentally/emotionally! Best of luck 🙂

    If you wait 15 minutes after you eat that sweet craving will go away. Just have a drink of water and that will help. It works for me

    your breakfast is so bright and summer-y. Im the oppostie about the showers, i have to force myself to take one. I always feel better afterwards though.

    I love mango too! Lately the husband has taken a shining to mango smoothies. I use banana, mango, papaya juice, pineapple and ice. I can’t wait for my bulbs. The crocus and snow drops have come up. Can’t wait for daffodils, tulips, dwarf hyacinth and irish to come up. And later our hydrangeas and roses! Happy gardening!

    We just got some of our daffodils here, and they really just make it spring, don’t they?

    Not a big fan of mango but maybe it’s because I tend to eat it plain. Would you say adding it to something is a better way to go?

    Wow, I just had kale chips with lunch….so good! I didn’t have any cheese, so instead, I used a Sweet n’ Tangy BBQ salt mix as a topping. Yum!

    My best advice for dessert after dinner is to make yourself busy. I usually just get started on my blog post and by the time I’m done I’ve kind of lost interest in dessert. So if you could go for a walk or go take a bath – anything to keep yourself from eating dessert because you don’t want the day/meal to end!

    I have to admit, the husband did most of the planing last year so I’m not really sure! I’m trying to be more involved this year 🙂 Herbs are easier than vegetables so you could try buying some of those basil plants that are pre-started and just planting them in a really sunny spot. We had a mini herb garden on our balcony when we lived in our apt. and had basil, dill, cilantro and even jalapenos growing in a planter. I think things like tomatoes and veggies are much more complicated. I’ll keep you guys updated on ours. There are probably tons of websites on starting gardens too – they would have more info than I do!

    Ever since I started having bananas in oatmeal I always think other fruit is too watery! I bet you’ll LOVE it with banana 🙂

    I was full when I finished this morning but it’s hard to tell how much satiety I got out of it because i was so active gardening. But in general, if I have a breakfast that’s 400-500 kcal with at least 6-7 grams of fiber and some nuts involved, it’ll hold me at least 4 hours.

    I know how you feel!! Trust me, you will snap back to your healthy weight faster than you think – you’re probably still bloated from eating out and water. Just get right back on track like the other readers said with water, fruits, veggies and healthy eating. A trip to the grocery store always replenishes my motivation!
