Someone Else’s Breakfast

I like sweet yogurty oats with peanut butter. You probably like scrambled eggs and toast : )

But to me, those are the ultimate lunch foods.

The scrambled eggs I had on the Jamaican breakfast buffet, however, rekindled a love for them. I don’t know why I’ve been eating eggs sunny-side up for so long – scrambled are so delicious. The only con (or pro!?) is that it really takes 2 to make a portion. One scrambled egg is just a little lonely. But eggs are nutritious, so that’s double the nutrients.

I went to cycle class this morning – it’s early and I always come home with my stores depleted but with a full stomach of breakfast. I always feel like I need a little post-workout snack for energy. Today I snacked on a few crackers at 11 to tide me over to a 1pm lunch.

    I love scrambled eggs. Actually, I love eating all breakfast foods for lunch/dinner! If I wasn’t going out for sushi tonight, that’s exactly what I’d be having!

    i’m the same way – i much rather prefer sweet for breakfast and savory for lunch. every once in awhile i’ll switch it up though. you’re right, scrambled eggs are so simple, yet so good! and good for you!

    Even when I make something at home (and therefore can control what I put in it), having savory stuff for breakfast makes me SO thirsty for the rest of the day. I much prefer it for lunch or dinner when I already have a lot of water in me 🙂

      Love it. I definitely prefer the ones that are bike rock cardio to the ones that try to simulate outdoor biking though.

    I love breakfast for lunch or dinner, but I can only eat cold cereal as a night time snack. Same with oats, I love them as a snack, but most of the time I need a savory hearty breakfast with tofu eggs and cast iron skillet potatoes. YUM.

    I love having breakfast foods for different meals instead of just breakfast. Scrambled eggs are yummy! I never make them enough either.

    What kind of juicer do you have or did you make your juice in the vita-mix? I’ve heard a vita-mix can juice.

      I have a Breville Juice Fountain Plus. It’s wonderful, but I don’t know if I would buy another if it broke. The vitamix can make veggie smoothies, but not juice. They are pretty different in taste and texture.

      I buy them from Chiaseedsdirect.com because they are the cheapest per pound there. Free shipping too! I put them in oatmeal or overnight oats to add texture or use them as sprinkles

    My youngest son and I love scrambled eggs for dinner…the ultimate easy comfort food for us. I will scramble 5 between the two of us and sometimes that doesn’t seem enough! lol We love it on toast with a side of veggies…I like peas or brocolli. My mother grew up always having a her eggs with a broiled tomato…she’s English. Quite yummy!

    I too am obsessed with jars. Like the idea of putting crackers in them. We did homemade Christmas and I got many jars filled with goodies. Let’s see more ideas of things to put in them!

    Yeah for cycle class! Maybe that’s why I’m always so hungry- it does deplete all of your energy stores!
    I love eggs for lunch- especially on a salad (scrambled or poached- it doesn’t matter!)

    Breakfast type foods are my favorite foods, so I will sometimes have breakfast and breakfast for lunch or breakfast for dinner 😉 I like how you have things stored in Bell jars, I use them for rice and beans, they are so easy!

    I’m assuming you used the yolk too in your eggs? I hear that it is the most nutritious part, so why is there a big deal with egg whites? I’m asking you your input since your an RD! Thanks Kath, btw love that you really do eat real food!

      The yolks have all the nutrition!!

      Back in the 80s people thought eggs = high cholesterol. This has been proven untrue. EAT YOUR YOLKS!!

      I guess some people just like the whites or are trying to cut calories, but they are cutting their nutrition short!

    I like scrambled a lot but as a Meeting/Event Planner I find that most hotels use powered eggs on buffets so I opt to go a la carte Eggs Benedict or for an omelette instead. They are my preferred type when home though!! From your RD studies – did they ever mention that? If they were “real” eggs I’d definitely be up at the buffet more often!!

      The ones in Jamaica tasted real to me, but they very well could have been bagged or frozen. I would always assume fresh is best when it comes to food though
