Rained On My Parade

Boy, Matt and I are both worn out.

He spent all day putting together this oven.

And my shoulders ache from sitting at the computer all day. I feel like I made a tiny chip in a wooden block the size of my house!

Brain food came in the form of 2 of my FANNEtastic Oat Puff balls – they were delicious!!

Despite being pooped, we managed another nutritious dinner, cooked in 10 minutes. We are super low on groceries too, so it was quite the accomplishment!

Grilled Sausage over Pilaf with Beer-Braised Greens

We grilled our leftover sausages in 5 minutes.

On the side, I heated up leftover brown rice with a handful of cooked wheatberries (I’m finding how convenient it is to have cooked grains on hand during these busy times!) with a few tbsp of Tribal Moose Cranberry BBQ Sauce, ‘bout a half cup of frozen corn and cilantro. The pilaf was great!!

I picked up a big bag of mixed “braising greens” at the farmer’s market and we steamed them in 1 cup of homemade smoked brown ale until they were tender and then removed them and cooked down the sauce with a drizzle of honey and a pinch of salt until it reduced by half.

I had plans for a lovely evening walk with my audiobook and it turned out to be a wash. Literally. No daylight or dry skies to walk under 🙁 Boo to rain on my book parade. When I listen to my book in bed I just dose off! Zzzzzzzzz.

    I guess I’m not alone in my 10 minute dinners 🙂 I went for quinoa pasta tonight with veggie/ nooch tomato sauce and side salad. Pretty good for 10, no? 🙂

    Sausage and greens are just about one of my favorite meals — for breakfast with an egg, or dinner with some polenta or oat bran and a drizzle of maple syrup, like this:

    I love that cooking idea for the greens…I never eat steamed greens because I just cant see to get them flavorful enough for my tastes! But your method sounds awesome….reducing is such a great technique!
