Quenched.

A lunch-time 4.5 miles left me thirsty.

Smoked salmon + greek yogurt + capers on Cville Crunch. The salmon was wild Alaskan King salmon that I won in my Foodbuzz Green Choice Award gift box. I am loving all the different flavors and kinds – King is the softest and most tender.

The trick to using the yogurt was to scrape the “cheese” from the top of the container and leave the wetter yogurt near the bottom.

On the side carrots + apple with peanut butter dough dip

This dip has really grown on me and this was by far the best application (on a salad = the least best). It’s all about the doughy texture!

    Thirsty? Maybe you or the plant have diabetes. Or maybe I’ve been doing too many diabetes educations lately.

      Haha, this makes me laugh b/c any time I say that to my mom (who is a NP) she says the same thing! Diabetes sort of runs in our family and she’s constantly questioning me on my thirst!

        Me too! I am always thirsty and super paranoid about diabetes. I make sure to get a blood test every year and each time I tell the doctor that it runs in my family and I am always thirsty… I may just be a hypochondriac…

      Haha I thought the same thing! I’ve been studying for my Clinical Nutrition exam all day and my head is stuffed to the brim with information about diabetes right now. 😛

          I had ice cravings when I was in my forties. Drove Kath and Laura nuts eating ice. I finally went to the doctor and she said, “Anemia or diabetes.” Luckily it was anemia and easily fixed.

    Lovely lunch. I have been enjoying smoked salmon often, it’s one of those foods I don’t find paying a little extra for. I need to make it myself. The dip does look yummy.

    Isn’t it interesting how certain things, foods, dips, etc can grow on you over time. Like they’re just okay or so-so when you make them but by the time you’re done, you’re actually really into them…that happens to me a lot! Some of my ‘projects’ that I almost pitch…I save…and end up liking!

    Is that salmon grey? I have never seen grey salmon, it is always pink/orange. Love the idea of having it in a sandwich with yogurt and capers!

      It’s funny…I noticed the same thing as well. I was looking at the sandwich and a little confused because I couldn’t find the salmon. It’s funny I often have the opposite reactions to certain things I’ve made. Instead of them growing on me, I become more and more sick of them the 2nd or 3rd time they make an appearance, especially if I didn’t love them in the first place.

        For some reason, about 25% of the king salmon population do not eat krill, which is the food source that gives salmon their pink color. These 25% have white meat as a result, but are just as delicious.

    King salmon = yummy! We have a lot of frozen Copper Rive red/sockeye which is amazing as well. (Helps to live in Alaska, at least salmonwise!)

    Mmm I love smoked salmon! Haven’t had it in far too long though. That type must be different to the orangey/pink kind I’ve had in the past though. Does it still taste the same?

    Greek yog as a sub for mayo is so smart. High in protein, and way healthier. Sometimes, when I’m so thirsty, it is literal magic to drink water. It’s like heaven.

    I usually reserve smoked salmon for special occasions…however…I may need to splurge and surprise my hubbie with an impromptu ‘special’ indulgence. Perhaps we can celebrate finishing our Christmas shopping!

    Hi Kath! Have you tried straining yogurt to make a sour cream/ cream cheese type texture? I have a nifty little strainer which sits over a jug in the fridge to do this – means that you get more of the “cheese” without the scraping technique!

    Funny to see you with gloves on – it’s summertime here in New Zealand!

      Yeah! I’ve made it before but didn’t find too many uses for it – I preferred the yogurt form. But this was fun to get the top part out!

        tosca reno has a recipe in her eat clean cookbook for yogurt cheese. basically you strain yogurt and then add other stuff (fruits, zests, etc) to make it as a spread for bread and rolls and for use in other things. might help you find other uses for it! it’s delish

    I am impressed that you can exercise mid morning. I went running once about 2 hours after breakfast and never again. I still feel like I have undigested food and it gives me a stomach ache. Maybe it’s because my stomach is not as young as yours.
