Presents Wrapped, Salad Wrapped

IMG_2896Blog

Not 30 seconds after making this lunch I got a message from Matt: “I’m near Whole Foods, want to meet for lunch?”

D’OH!

Followed by: “I’m going to get salad bar – for the nutrients!”

He loves that line. [And thankfully he’s feeling much better today.] Must have been the nap and the soup – and the beer!

IMG_2892Blog

On the menu was a whole wheat tortilla [WF brand] stuffed with lemony hummus [also WF brand], avocado, carrots and mixed greens.

IMG_2887Blog

I bought a bag of shredded carrots on a whim and my gosh they have been SOOO convenient and fun to throw into things! They might be more $ per ounce, but I think I enjoy them that much more.

IMG_2894Blog

On the side – an apple with that amazing Wisconsin Red Rock Cheddar Bleu

IMG_2886Blog

[I was sent this cheese for a recipe – must find it in Cville it’s that good!]

You can make the most simple lunch look gourmet. I was at Whole Foods today and managed to control myself for once and NOT get a meal from the bar!

I love apples and cheese. Go really well with Triscuits, too. My mom and I loved it as an afternoon snack in my youth. The wrap looks delicious, too!

I’ve still never tried the cheese and apple combo, but yours looks good!

I have a fancy cheese market a block from my office and I bet they would carry that kind! I’m going to check it out this weekend.

Did you wrap presents today (just guessing based on the post’s title)? If so, jealous. My shopping is done, but I haven’t yet done the wrapping. Soon!

I seriously need to get started wrapping my gift! I love gift wrapping (I actually have a wrapping station table that stores everything inside & folds down) & usually do it a couple weeks before Christmas but it’s now 1 week to go…and nothing wrapped… fail! 😉

I love shredded carrots and broccoli slaw! For some reason that shape and texture is just right for adding to salads, etc! I also always like to add that to my pasta meals to get in a bit more veg 🙂

shredded carrots are one of those convenience foods I can’t live without. I like mixing them with hummus for a take on coleslaw and I also have a recipe for a spicy shredded carrot/peanut butter/edamame wrap.

Any excuse to get WF salad bar is a good reason in my book. Good for you for sticking to your wrap – I would have seriously considered putting it in the fridge for later and going to get salad. 🙂

That cheese looks fantastic. I have never had one like that and we are usually very spoilt for choice over here, as both Britain and our European neighbours make such a wide range of beautiful cheeses. I will look out for something similar.

I’m all about the pre-shredded carrots. There’s a brand at our grocery store called Bunny Love and they do pre-shredded and pre-cut carrots, they’re a little more expensive than just buying whole carrots – but I find I’ll eat more if they’re pre-cut and pre-rinsed, instead of rinsing, peeling, and chopping myself!

My mom and I both agree that that Cheddar Bleu cheese looks amazing…so much so, I called up the local cheese shop to enquire about it. Alas, they do not sell it, nor would they be able to get it in…I live in Canada. The guy was very interested in it though…hopefully he takes an interest in it! My aunt lives in Wisconsin…maybe she can find it!
