Prepared To Get Wet

I have got to step away from the computer – my shoulders have been killing me lately and Matt hurt his neck (not too bad) so he can’t massage them! (Or rather, I haven’t asked). I’d book a real massage but I am too busy to spare a morning or afternoon right now!

Lunch is always a nice break 🙂

IMG_8016Blog

I made a killer pesto panini!

IMG_8014Blog

I used the Pestos with Panache Smoked Almond + Prosciutto pesto – so amazing! Smothered that on a slab of raw tempeh on Great Harvest Dakota and gave it a buttery sizzle in a pan

IMG_8024Blog

Think I got a little too excited with the heat!

IMG_8023Blog

On the side – the last vegetables we have for salad

IMG_8015Blog

Spinach, carrot and pepper plus orange, date, sunflower and buckwheat. Balsamic for drizzle

Drank.

My workout today involves walking + biking while running errands. Our weather is iffy so normally I would just drive, but today I am just prepared to get wet! Let’s hope I don’t get caught in thunder and lightening though…that would be scary.

Peace!

Ack – it must be raining everywhere today. It hasn’t stopped here in over a week!!! You know it’s bad when it smells like worms the minute you step outside. But hurray for the good attitude – be careful if you go biking in it!

The panini looks super delicious — and I like them a little more on the burnt side too. So crunchy and good.

I’ve never had tempeh… (and I was a vegetarian for 5 years!). What is your favorite brand?

That pesto looks divine! I just planted 4 basil plants, and hope to be able to make scads of pesto this summer, again.

You find your shoulders? I always find my back – mid back especially. I know I sit too rigidly too…and not even fully in the chair! Do you find your back?

Love the colors of the pics! Good luck with the rain – I went out for a walk and got drenched 10 minutes later. I know it’s only water. But it’s cold. And only okay for the first 10 minutes – before you have an extra 10 lbs of “wet” added to you to drag home…

I love all kinds of vegetarian products (like veggie meat, tofu, etc.) and incorporate them into my diet often so as to lessen my meat intake but for whatever reason, I cannot get into tempeh. I don”t know what it is but I actually have a visceral hatred of it, lol. You do make it look appetizing though 🙂

Joy, I like it plain raw or steamed, without any flavorings but do have a hard time converting others. Try marinading it (and/or saute it) in some appealing combination of tamari (or Bragg’s amino acids), mustard, spices. Or, try sauteing in fresh juice from an orange, tiny amount of agave w/ ginger. Just about any flavoring that will complement your meal would be good – tempeh is pretty much a blank canvas.

Don’t give up yet – it’s such an easily digestible form of fermented minimally processed soy w/tons of fiber and protein, even in the smallest of portions.

I am new to your blog and have loved loved loved your site! All of your ideas are so fabulous. I’m grateful for you!

Your salads look incredible!! When you use honey/oil/lavendar salt as your salad dressing, how do you make that…about 1/2 honey, 1/2 olive oil and a little salt?

    Thank you so much,

      Welcome Meredith!

I drizzle on about 1/2 to one teaspoon each of honey and olive oil, depending on the size of the salad. Then I just pinch 2-3 pinches of salt on top.
