Pick Your Own

We were very lucky when we rented this house to inherit a gorgeous bed of strawberries that our landlords [who are gardeners!] started.

They kept telling us “You’re going to have gobloads of strawberries soon!”

I thought..I’ll believe it when I see it. And see it I did!

I went out scavenging for breakfast this morning when I realized there were pops of red hidden in the green

And I came out with a huge bowl of super ripe berries!

I like strawberries just plain, but my favorite way to eat them is when they are cooked. In a pie or cobbler..or buckwheat bake!

So I got my batter on, then my microwave on and came out with an overflowing mini strawberry buckwheat pie

NOTE: Whole eggs work great in baked buckwheats, but microwave versions are best with flax eggs!! The egg took much longer to cook and created too much volume. I’d recommend a flax egg for the microwave. And less strawberries unless you want a mess!

Strawberry Buckwheat Breakfast Pie

I like strawberries just plain, but my favorite way to eat them is when they are cooked. In a pie or cobbler..or buckwheat bake!
NOTE: I used a whole egg in this recipe, but microwave versions are best with flax eggs!! The egg took much longer to cook and created too much volume.
Prep Time 5 minutes minutes
Cook Time 2 minutes minutes
Total Time 7 minutes minutes
Servings 1 bake

Ingredients

  • 1/4 cup buckwheat flour [ground buckwheat groats in a blender]
  • 1 tbsp buckwheat groats
  • 1 tbsp chia seeds
  • 1/4 tsp baking powder
  • 1 tsp vanilla
  • Flax egg [1 tbsp ground flax set in 2.5 tbsp warm water for 5 minutes]
  • Half banana mashed
  • 1/4 cup milk
  • Sprinkle cinnamon
  • Pinch salt
  • 1/3 cup strawberries

Instructions

  • Mix dry.
  • Add wet.
  • Stir to mix.
  • Add strawberries.
  • Pour into 10 oz / 1.25 cup ramekin
  • Microwave for 1 minute 35-45 seconds

Toppings included Cacao Bliss (long time, no see!!!!!!!) chocolate coconut butter, coconut butter and a few more strawbs.

    Steve and I are lucky too, since the property we live on [we get housing through his work, included], there are raspberry, blueberry, and blackberry bushes. I absolutely love stepping right outside to pick fresh fruit.

    That’s brilliant that you inherited a mini-strawberry patch! I tried to grow a plant last year, and got a few berries off of it, but decided it wasn’t really worth the time or effort. I have an absolutely lovely Farmers Market to go to every Saturday morning, and can pick up delicious local berries (albeit for a price!). And, I can use my gardening space for my crops that produce for more than just a few weeks.

    Thanks for the heads up re: the egg and buckwheat bake… I have only tried the bake one time, and it was a pretty major fail for me. I used a whole egg and cooked the bake in the microwave. It was so super spongy and weird… I wasn’t a huge fan. I’d love to try the oven-baked version, but that is not an option during the week! I’ll give the micro version another try with a flax egg. Thanks! 🙂

      Hi!
      I have my own strawberry patch and wouldn’t give it up for the world! 🙂 They are very easy to grow, just a little work to MAINTAIN, due to the fact that they spread via “runners” and the weeds like to really get in there! That being said, I have VERY few problems with weeds since I started cutting them back once they were done bearing, layering the ground around the plants with newspaper, then topping it off with some sort of organic mulch (chopped bark is great) No weeds now 🙂 And recycling too!

    You’re so lucky – I’ve been dying to plant my own berries because I’m sure it would save me gobs on produce, but unfortunately berry bushes are a no-go in an apartment, haha. They definitely are better warm and gooey too!

    omg strawberries are the absolute BEST fruit out there. They’re fantastic as a snack, baked in anything, smoothie form….like I said they’re the best. I went through 2 lbs in one week….I might have a problem.

    I have a bed of strawberries that just keeps spreading–we don’t have to do anything for them!! I have to admit that fresh strawberries taste SO much better than those bought from a store (no matter what store!)–it sure encourages me to eat seasonally!

    PS, I’m a c’ville resident and stumbled upon your blog–love it! And I’m so excited for the bakery to open–I usually make my own bread, but I’m excited to try a few of the bakery’s varieties!

    My mom and I both want a garden, but I don’t think strawberries can grow in our backyard here in Cali.

    Whoa!! Total overflowage!! That’s never happened with mine, haha. Not sure if I prefer the egg or flax egg for the microwave. I’ve never had it turn out spongy with the egg though, like someone mentioned above. It’s always really muffiny!

    your so lucky, thats awesome about the free strawberries! The best I had with that was when I was living on an island for the past few summers, wild blackberries grew everywhere. They were very tart except for a certain week in the summer and all the native islanders knew when to pick them so they were perfect.

    Those strawberries are bursting with color! When I lived in Sweden, there would be wild strawberries growing in the forests all around me. We would go and pick them, and eat them on the spot. I would often come home with red fingers, hehe.. guilty 🙂

    Nice! Whenever we try to grow any produce outdoors like that, animals eat it right away! It happened last summer with corn on the cob. Damn raccoons. Wonder how your strawberries avoided that fate? Enjoy.

    Have to ask how you and matt are dividing the bakery work.every post talks about matt being at the bakery while you run,bike and go to body pump.i know that the blog business is time consuming – you definitely have some obligations.but i have wondered how my husband would handle building an oven while i took a walk with girlfriends.is he getting his chill time too?

      The bakery is primarily his business. It’s his passion. I’m helping as much as I can doing the things that I am good at. I think your comment is a little unfair…

        People who regularly read you blog are in the know. It is just her loss for missing so much. Seems to me that before someone would post a judgmental comment, they would have their facts straight. Kath’s whole blog history remains online. Take the time to go back and read. Even if it is not in real time, it sure is good reading! 🙂 (Well done Kath, and we love to hear all about the bakery and are proud of you and Matt.)

            Hope Matt takes a bit of time to let off steam/stress of opening a biz is he can-
            going for a run or to the gym might help him not overdo it.
            I have seem to many people burn out quickly and lose their passion-
            hope he takes care of himself.

            I think you are balancing things in a good way yourself-your workouts will
            help you through these busy times,esp mentally!

              Makes sense. It’s amazing, also, how, when someone has a passion for something, it can actually be energizing. When you find what you love to do fitting in with who you are as a person, it makes all the difference.

    omg! i’m so jealous! i’ve always wanted a strawberry patch of my very own. when i was little my grandpa got me a few strawberry plants…but nothing like your garden!!!

    I made a microwaved buckwheat bake this morning [with the flax egg] and it was fabulous!! I love the texture of the microwaved version 🙂 Jealous of your little strawberry harvest!

    You’re so lucky to have your own strawberry patch! I can’t wait until the berries are ready for picking at the farm where I work. Unfortunately it won’t be for a few more weeks because of all our crappy weather recently. 😛

    And the very cool thing about those strawberries is that there are no preservatives in them! Strawberries are extrememly porous and absorb (as in “suck in”) anything that is put on them. So, you don’t want to buy anything but organic strawberries, unless you want to inhale “instant chemicals”!

    My favorite way to eat a strawberry is just to wash it, cap it, and eat it — but your strawberry buckwheat volcano looks pretty yummy too!

    Ha! We used to have a strawberry patch in our backyard. Our dog (who died from cancer and we still miss him 6 years later) ALWAYS knew which ones were ripe and he’d run past it and swipe one. He did the same thing with cherry tomatoes. 🙂 Thanks for the memory!

    Yummy! I had to improvise a little….organic buckwheat pancake mix, flax seed, oats, blueberries, regular egg, banana and vanilla soy milk. DELIGHTFUL! It tastes like dessert for breakfast!

    Okay,it isn’t a judgemental comment.i asked an honest question.i did not say anyone was wrong or that anything was or is unfair.i asked how u and matt balance the workload.i have read the blog for quite some time. i think it is difficult to share a business and difficult to work from home.i work at home and my husband some times feels i have more leisure time.my husband is at work and i some times feel he has more down time because he is away from the kids and responsibilities of the house.this blog is a discussion of balancing a healthy lifestyle and my question pertains to balance.
