Pick, Plant, Eggplant

I think the grass worked! I am feeling better.

Afternoon went like this:

Short class period with time to fit in a nice elliptical workout at Winthrop’s gym:

IMG_4412 (640x480)

Tried two new bars today – disliked both. I had half of one and then decided I would feel emotionally unsatisfied for eating something I didn’t like so I tried another. Two bad bars does not a good bar make!

The Cocoa Mole LaraBar was the first one I have really not cared for. It was too spicy. The Luna bar just tasted like the epitome of fake. [I am parked at a stoplight, FYI!]

IMG_4413 (640x480) IMG_4414 (640x480)

Then it was off to garden in the rain!

IMG_4419 (640x480)

Lauri and I joined Betsy, the garden manager, and picked over 30 pounds of produce!

Beans, okra, tomatoes, jalapenos, green peppers.

IMG_4420 (640x480)  IMG_4415 (640x480)IMG_4416 (640x480)

And then Betsy made me plant onions!!!!!! The horror!!!!

IMG_4417 (640x480)

After two hours in chilly drizzle, I was stoked for a hot shower and a delicious dinner.

IMG_4433 (640x427)

IMG_4448 (640x427)

We cooked a base of pasta. I got this Barilla Plus from Costco because it was very inexpensive. It was good. Tasted like whole wheat to me.

IMG_4421 (640x427)

Eggplant. I cannot decide between sweet potato, butternut squash, okra and eggplant which is my very favorite veggie. LOVE them all.

IMG_4423 (640x427)

We cooked the eggplant in a skillet in some canola oil, Worcestershire sauce and oregano until it was marshamallowy tender. We also sautéed a bag of kale in some garlic and a little water. We combined those over pasta and decided for a "sauce" we’d each do our own thing.

Mine was topped with 2 dates, 1 dried fig, 2 tbsp grated Parrano cheese and 2 tbsp fig goat cheese from Costco. It was HEAVENLY!

IMG_4437 (640x427)

IMG_4442 (640x427)

Matt made a tahini + hummus sauce for his. It was excellent too!

IMG_4445 (640x427)

I amped up the atmosphere with candlelight to make it extra cozy

I like the fresh look of G Chrome too but I don’t know why it is S-L-O-W. I tried uninstalling and reinstalling it but that did not help either. I know you won’t know why it does that but I was sharing it with you. I love my Mozilla and have chromified it to keep the chrome theme. Love my Mozilla all the more now! I would love to be a chrome girl only if it gets speedy!

About a week or so ago, someone left a link on your blog to a banana peanut butter spread recipe. I really wanted to try it, but I can’t seem to find it again. By any chance do you know what I’m talking about?

Haha, I checked out Google Chrome this morning too and I was like THIS IS AWESOME.

Also, I gotta buy eggplant soon. I’m on a “no-grocery-shopping” spree (I grocery shop far too often, and I’m trying to use up some of the food in my pantry before I spend more money on new stuff) – but when I go shopping this Friday, I’ll definitely be picking some up. =)
