Pack It In

FoodBlogIMG_2236

I think I need a bigger bowl!

FoodBlogIMG_2246

Matt brought home another test item last night – a Raspberry Almond Muffin. I was commanded to try it out for breakfast!

FoodBlogIMG_2243

Served with a healthy dose of greek yogurt, blueberries, banana, half a crumbled muffin and sunflower butter. The muffin’s flavor was great, but I think the bread/cake part needs work on the texture. I absolutely love the texture of our Blueberry Buttermilk muffins (this one was a little stiffer in comparison).

Hehe I am notorious for choosing a smaller bowl than I need when I make salads. I end up spilling half of it on my placemat…… someday I’ll learn! Happy Friday Kath!

This one was a little stiffer in comparison… that’s what she said! Haven’t watched The Office for awhile, say that our DVR recorded the Welcome Party episode last night. I don’t know if I’m excited for this season or not, last season was just not the same without Steve Carrell. Raspberry almond sounds delicious, but I do agree that the texture can sometimes with the flavor. Raspberries seem to need a lighter, less dense muffin while other berries and flavors can be more dense or firmer. I have a cherry almond recipe that I was thinking of trying today. Yesterday I made banana blueberry and used about half whole wheat flour which worked well. Glad Mother Nature is helping her out, send her to Nebraska. I’m not so worried about my grass and plants, but the farmers desperately need rain. We are in a drought and there seems to be no relief in sight, 104 degree temperatures into next week! Have a fabulous Friday!

I have to admit I was very skeptical about this plain yogurt breakfast you have so often. I DO NOT like the taste of plain yogurt. Always have to mix fruit puree or something in it (which I rather do to avoid the added sugar). Today I decided to try it with blueberries, banana, granola, a sprinkle of sunflower seeds and almond butter. I was pleasantly surprised at how good it was! I only had a hard time eating the last couple bites of the plain yogurt, but I think I’ll be adding this to the breakfast list. I also thought the nut butter on top would be weird but I really liked it. Question, how much yogurt to you eat? A serving is a cup but that is way to much for me, especially with all the added toppings. I did about 2/3 cup…

buttermilk in baking is great – and if using another milk other than it for the new muffins, the crumb may be a little tougher and denser but I’m sure I’m not telling you anything new here 🙂
