Over & Out

French toast for a crowd! Cinnamon Pecan Swirl (from Great Harvest) with a dollop of peanut butter, a little extra scrambled egg and a seared pear. I cooked everyone a slice for breakfast.

Plus two cups of regular coffee. I don’t drink caffeinated coffee because I’m very sensitive to it, so I sure hope I’m not addicted when I go back to decaf at home!

Matt and I drove over to Durham to meet up with Sarah and Baby Annabel for lunch and a walk today.

Sarah and me at 34 and 13 weeks pregnant at her baby shower!! So hard to believe our little ones were inside -

And now!

We walked around Duke’s East Campus and then went to lunch at Lilly’s Pizza {because Parker & Otis was closed. Again!}

I had this amazing tofu salad with cherries, almonds, cheese and a lemon tahini dressing – plus those cute pizza crust crouton puffs!

Matt ordered a vegan tofu Stromboli (this pizza place wasn’t particularly vegan – we were just in tofu moods!). He shared a slice with Sarah and me and it was sooooo good. Southwestern-ish ingredients inside with an Asian-ish tofu marinade. Loved it!!

This afternoon mom and I went to Burlington to try on and choose my bridesmaids dress for Larbs’s wedding this summer. They didn’t have the style I want to order, but I got a good idea of what looks good and what doesn’t.

Then we headed back to downtown Durham for a pizza dinner

We went to Pizzeria Toro, one of Larbs’s favorites. So sad she wasn’t there to go with us.

Unfortunately there was a long wait for a table, but we chatted in the bar over some drinks for a good while

And then the five of us shared 3 gourmet pizzas –

    Oh the babies!!! I love that your life hasn’t really changed since you had a baby. So many people think you don’t get to have fun anymore when you have kids. Things change but you still get to have a good time.

      That’s so true! It’s kind of nice seeing that you can still keep some things the same and fun, even though it may get more hectic 🙂 And that is so cute you girls were pregnant together and now have babies in your arms together! Wish my close married friends got pregnant now, lol.

    Too bad this place is 90 minutes away from me (I live halfway between Lexington and Salisbury), but that pizza looks fantastic!!! If we ever take a day trip to Durham, we’ll surely stop!!

    I want restaurants like you guys have. We are supposedly a hot new foodie destination but I’m rarely impressed anymore. Your town looks worth a visit for the food alone!

    Cute babies! I see Mazen in the carseat + Bob. My lil dude is 3 weeks old and we don’t have the carseat adaptor, do you think its worth it? How long do you see yourself putting M in with the carseat? What do you do on your trail walks? Thanks 🙂

      Definitely for winter… It’s so much warmer than the seat for us. I also like looking at him while he still likes looking at me : ) also easy to keep him tucked in from car to stroller. Definitely worth $40.

    I love the pre and post pregnancy shots of you and Sarah and with babies in arms! It’s amazing what a difference a year makes 🙂

    pizza crust crouton puffs = I want those!

    And that stromboli sounds fabulous, too! Southwestern-ish ingredients inside with an Asian-ish tofu marinade sounds great after all the cookies Ive been eating!

    Hey Kath…P&O was closed because they had a big fire. 🙁 No one was hurt but they’ll be closed for a while for repairs. Hopefully back soon and better than ever! Love that place!

    I think my favorite dinner with family is splitting a bunch of gourmet pizzas. It’s comforting and delicious! Mazen is getting cuter by the minute.

    I notice you eat tofu often (or maybe it just seems often to me). I’ve been doing some reading and soy products seem to be associated with higher levels of estrogen. As an RD, do you have any concerns about that?

      I probably have whole soy no more than once or twice a week. I also only eat whole soy – tofu, tempeh, soy milk, edamame – and stay away from anything hydrolysed like soy bars or protein powder.

        just for the record- tofu and soy milk are considered processed soy and not “whole soy”

    Matt’s vegan tofu Stromboli sounds AMAZING!!! You’d barely find tofu on a menu in handful of restaurants across the whole of Ireland! Would love to be served up something that looks and sounds so incredible! Remember when you posted the pics of Sarah’s baby shower….seriously only feels like a few weeks ago!

      Thanks! I use Alba Sea Minerals cleanser and moisturizer in the mornings in my shower and Bare Minerals makeup. Not much else!
