On A (Sushi) Roll

Biking didn’t happen today because I found 1,000 other things to do around the house. I finallllly cleaned out my closet and exchanged winter –> summer clothes. Then I vacuumed everything, cleaned out the guest room closets, cleaned the shower top to bottom. It took me all afternoon and I was sweaty, exhausted, and starving when Kelsey arrived at 5:00!

While I was organizing, Matt was out picking up smoked salmon and THESE!!! (Squeal!!)

I’m so happy with them. They are funky and modern yet still elegant – exactly what I was going for. Hope you like them too Gram! Thanks for sending them!

Kelsey came over tonight for a dinner we’ve been meaning to make for ages: SUSHI! Matt and I made it once before when we lived in our apartment and the nori I bought was gross, so we never attempted it again. I decided I needed to give the store-bought nori another try after  hearing Kelsey tell me about some of her combos. She picked up some from an Asian store and it turned out to be perfect. Not sure what was wrong with mine last time!

I told her I was on cut-back from wine and desserts from a week straight of them, but somehow a bottle of white wine was opened and I ended up having a glass. Yum.

When I finished my mad day of organizing at 5:00 I was starving, so Matt made us an appetizer on the sour dough bread he made today and the hummus I made yesterday. I had 2 of these toasts to tide me through sushi making.

We also opened some snack mix Danica sent my way from Annie’s! Just had a few bunnies – they were cheesealicious

Then sushi assembly commenced –

Ingredients included:

  • Nori
  • Bell pepper
  • Cucumber
  • Avocado
  • Toasted sesame seeds
  • Smoked salmon
  • And sauteed mushrooms

We toasted the seeds in a dry pan until they browned slightly

And cooked the shrooms in some tamari (like soy sauce) and more sesame seeds

Plus the required pot of sushi rice! 1.5 cups for our spread seasoned with rice wine vinegar

We used to have sushi mats (I promise Kelsey!!) but they were no where to be found. So instead KLM rolled them by hand and used this super tech silicone sushi mat as a helper when needed –

Each roll had a different combo of ingredients + flavors, some even with hot seasoning and capers. Kelsey did a fabulous job!

For the first time EVER sushi really filled me up tonight.

Turns out both wine AND dessert snuck into this meal even though I didn’t really care for either tonight! But tomorrow is our wedding anniversary and we will be traveling to RDU for grampa’s funeral, so we had to eat our frozen cake saved from our 1 year anniversary tonight instead!

We cut the slice three ways and enjoyed it while we watched our wedding DVD 🙂 It was pretty darn good for being frozen for a year! French vanilla with raspberry chambord filler and vanilla buttercream.

I am very scared there might be a roach around the corner and it’s VERY hot down here at my computer so I’m headed up to the fan to read in bed. Nite!!

    WOW most beautiful homemade sushi I’VE ever seen! That really makes me want to give it a try one of these days… I have a feeling mine wouldn’t be quite as perfectly rolled up though… haha

    We didn’t have any cake left to save! Booo…

    I am totally whipping out my rehearsal dinner dress for our anniversary. I love it too much to only have worn it once. What a great idea!

    AND don’t feel bad about the wine, I distinctly remember you saying that you needed to enjoy a glass at home a little more frequently.

    Sushi night looks like so much fun. Glad to hear it turned out great.

    Our 1 year anniversary is coming up and I have been contimplating the whole cake eating tradition. I have our top saved in the freezer, but I am really not too sure how this will turn out. I’ve heard good things and bad things, so I think we shall taste and see.

    Happy anniversary and so sorry to hear about Matt’s g-pa. My thoughts and prayers are with you and his family.

    I love making sushi at home but don’t get around to it much. If you want to avoid tasting the nori make the reverse roll…..after putting the rice on the nori flip it over (the rice should stick) and layer the ingredients on the paper…then roll as usual. I like the rice on the outside versus the nori….easier to bite through as well.
    I love your blog….a newby to adapting to a healthier lifestlye….love the inspiration I get from your site…THANKS.

    I had a bad store bought nori experience once as well. I haven’t tried making sushi since, but Kelsey did a fantastic job and now I want to try again. Congrats on 2 years! You guys are adorable together

    3. Awesome sushi! If you have an asian supermarket around, they’re a goldmine for inexpensive fruit and veggies, some exotic that you won’t find in your neighborhood supermarket!

    Hi Kath!
    I’ve read that homemade yogurt lacks vitamin D. Is this true? I always look for vitamin D fortified yogurt in the stores, but was thinking of making my own. If I just use vitamin D fortified milk, won’t the yogurt be fortified?
