Old Man Date

The old man date continued over dinner! Kate had plans tonight so we invited Nate to dinner.

I got my two pressing projects finished this afternoon just in the nick of time. I had hoped to get to one more, but it’s something that I’ve been meaning to finish all semester so what’s another few days!?

More beers flowed, and I took sips at whim (per usual). At one point Nate was keeping a count – I think I am up to 10 for the day!?

For dinner Matt made spaghetti with a homemade sauce!

This is a winter version of Mom’s Tomato Sauce, which is my very, very favorite thing about tomato season! The winter version contained:

  • 1 carrot, diced
  • 1 celery, diced
  • 28oz can crushed tomatoes
  • 28 oz can whole tomatoes
  • 8oz can tomato paste
  • 1oz sherry
  • 1T balsamic vinegar
  • 1T olive oil
  • salt, pepper, red pepper flakes, italian herbs to taste

Served over a whole wheat pasty medley (because we didn’t have much of any one kind) and topped with feta, olives and capers.

I served mine with a side of spinach, which I let wilt simply with the heat of the pasta. Yum!

    I have never thought of putting capers on spaghetti! What a great idea! It makes sense to with the olive and feta!
    I may have to recreate this sometime 🙂

    I love mixing in salads with hot pasta. Sometimes I just pop all of the pasta on top of a bed of spinach or romaine, so I get a little crunch with every bite!

    What great looking sauce! And there’s nothing wrong with a pasta medley – I do that sometimes when I just can’t decide on a single kind to use!

    Looks like the ‘old men’ decided to skimp out on their veges. Tsk, tsk!

    Good job on the projects! I bet it feels good to not have to think about them anymore.

    That pasta looks fabulous. Matt, how in the h do you stay so thin ? You eat carbs and all that yummy food and BEER(which is part of our food group ) Right ?

    We haven’t been to the Bulldog – yet! Andrew gave us those glasses for Xmas and has been there many times. Hopefully we can go when we visit NOLA in May!
