Oat Train

Back on the oat train!! It’s been a long time since I had hot oatmeal : )

I prepped rice cooker oatmeal last night complete with Coach’s oats, cinnamon, pinch of salt, vanilla, chia seeds and raisins.

This morning I stirred in blueberries, cottage cheese and a blob of Sun Butter!! It’s also been way too long since I’ve had an open jar of sunflower butter – my all time fav!

Earl Grey is the tea of the week! Mom gave me a few of her extra teabags.

Our forecast is lookin’ gooooood! 60 today, 69 tomorrow. I’ve got a packed day today out of the house full of gym time (it’s been a while!), lunch meetings, granola bagging/bakery work and possible computer shopping before the sun sets!

    I’m looking forward to the next couple of days of 60 degree weather! It should be nice. I was hoping for snow this winter but I don’t think that is going to happen so I’m officially awaiting the arrival of spring 🙂

    Breakfast looks yummy! I love that bowl!

          I made sunflower butter for the first time a couple of weeks ago, using Mama Pea’s recipe and the one here: http://prudentbaby.com/2011/08/entertaining-food/how-to-make-sunbutter-the-best-sunflower-butter-recipe-2/

          I have a food processor, not a Vitamix, so the second recipe with the instructions on waiting to add the oil was helpful.

          Toasting/roasting the seeds first, and then the amount of sugar and salt you add can give a result pretty similar to TJ’s. Also, it’s easy to find organic sunflower seeds, but hard to find organic sunflower butter. You can make your own organic version cheaper than buying the non-organic 🙂

              Niiiice! I made some several months ago but in a cuisinart food processor. It was delicious!!! However, it wasn’t as velvety as TJ’s or sunbutter. Probably b/c it’s not the best processor for it?

    I saw some Sun Butter at Trader Joe’s this past weekend and wanted to try some, but $4.50 still seemed like a lot for a jar of but butter, to me at least! I may just have to take the plunge though! 🙂 I have never thought of putting cottage cheese in my oats before. I love sweet ricotta pancakes though, so I could see this being a winner! 🙂

    I had not had sunbutter in months but when I had it for a snack yesterday, I was reminded how much I really do love it!! Might have to pick up a whole jar since my single serve packet is now history… and yeah for your weather!! Crazy you just had snow and now almost 70!! Winter is so weird this year…

    Love a bowl of oats to start of the day…have to remember to pick some up today as my son has gone without for two days now…he even ran out of milk for his cereal and we had to top it off with some Soy milk! Ya I know…mother of the year! lol He’s happy he has Blueberry Pancakes left over from last night’s Shrove Tuesday dinner for lunch! My back up plan! Nice!

    Yummers! I just got back from the gym myself. Made one of my simple faves- Oats mixed with greek yogurt, enough almond milk to make it just a very little bit loose, tons of cinnamon, chopped Fuji apple, and some chopped walnuts.
    Tastes like a big oatmeal cookie! Nummy!
    Sunbutter is a cinch to make.

    Your pictures of oats inspired me make them yesterday. As good as they were, I just missed my savory breakfast. I don’t know about anyone else, but even though I know oatmeal is supposed to make you full longer, I find my savory tofu scrambles way outlast my oats. How long do your oats keep you full?

      Normally 4-5 hours. Are you adding protein and fat too? If you just do a small portion of oats in water with fruit, it won’t last as long. 100 calories or so from fat and milk/soy milk will help it stretch a lot longer (almond milk has very little protein, so that wouldn’t stretch as far)

    What a busy day you have! You just never stop. I’ve been popping blueberries in the morning too. Fresh in from Chile. Can’t wait until they are fresh in from my backyard…but will have to wait a few months for those 🙁

    You definitely made me a believer of cottage cheese + oatmeal. I love that combo!
    Isn’t it crazy that you guys got so much snow the other day, and now it’s in the 60s? We didn’t get any snow- but I’m certainly not complaining. Bring on the dog-walking weather!

    So it looks like your regular eats are coming back! When did your appetite return to normal (in pregnancy weeks)? I’m 11 weeks and 1 day and I can’t stomach a bowl of oatmeal. Mind you, I used to have oatmeal almost ever single morning before I got pregnant.

      Right when I hit 12 weeks. I’ve cut back on the meds to once a day, and salads sounded good. Remember when I ran to the Whole Foods salad bar? That was the turning point!

    Is your rice cooker really easy to clean? I haven’t bought one because it seems like SUCH a pain but maybe I’m just not familiar.

      It is amazingly easy to clean!! I put the pot in the sink and fill it with water during breakfast, and then after I’m finished eating I go to clean it and the oats literally just rinse out with water. I use a sponge with detergent for an extra bacterial boost, but it’s barely needed.

    I really like Trader Joe’s Sunflower Seed Butter! It is the best that I have found. If I could make it to taste just like it, I would be sooo happy!
