Night Before

I am writing this last night!!!

[Insert morning run commentary here]

We set the alarm for 6a but didn’t actually get out the door until 7 thanks to several snoozes and general lethargy. But once we were going, it was good. Just over 5 miles of honeysuckle and bacon smells! It wasn’t my fastest run but it was slow and steady.

Do any of you have trouble with your Garmin loading satellites? It took mine 10 WHOLE MINUTES to turn on and we were too impatient so we just left and it missed the first half mile or so. Guess I just need to turn it on well before I’m ready to go. Guf.

[/end Saturday commentary]

Today I am headed to Hillsborough to spend the day with my mom, attend a town cookout, and then in the morning we are going to see OPRAH!!!!!!!!!!!!! Well, technically, we’re going to Duke University’s graduation, where Gail’s son is graduating and Oprah is speaking. Mom and I are huge Oprah fans, and I thought it would be a fun way to spend Mother’s Day.

Matt is heading back to Charleston for a bachelor party!!

I order to get to Hillsborough in time for shopping and lunch, I wanted to leave by 8. I also wanted to squeeze in a workout, so I had everything prepared the night before, including breakfast and this post!

I made us each a smoothie to take on the road –

IMG_5855 (1024x768)

For two servings this contained:

  • 1/2 block silken tofu
  • 1/3 cup raw oats
  • 1.5 bananas
  • 1/2 cup chopped mango
  • 1.5 cups milk
  • 2 tbsp flax
  • 1/2 tbsp honey
  • 5 ice cubes

Put in fridge to store overnight. Stir in morning.

IMG_5858 (1024x768)

It’s awesome!!

IMG_5856 (1024x768)

IMG_5857 (1024x768)

I’ve got this for a second breakfast if I need it –

IMG_5860 (1024x768)

HAPPY BIRTHDAY BENDER!!

Can’t wait to see Lillian too!

I love Gayle as much as Oprah; they are a hoot together–cinnamon brown with a dollop of caramel. I listen to Gayle’s radio show when I’m in the car (XM!) I tend to agree with her on so many topics, although I didn’t get as freaked out by the Dr. Laura Berman discussions as she did.

Sometimes, if you have a lot of trees or high buildings around, it will take longer to load. Try to be in an open area.

Sounds like such a fun weekend! Your fridge looks eerily similar to mine. Buttloads of condiments (salsas, butters, mustards, etc.) and lots of drinks, but not a ton else. I need a trip to the store in a code red kind of way! Also, I’ve never seen oats in a smoothie before, but it sounds delicious! I will have to try it

So does the smothie stay cold enough overnight in the fridge? I would be concerned that is would get to liquidy and then all the good stuff in it would settle at the bottom. If it doesn’t, I’m SO going to do this myself! I never have time for these things in the morning, but this would be a great solution!

I was also wondering about the smoothie liquidfying and the the good stuff separating to the bottom. Did you have to do anything to the smoothies in the morning aside from stirring it up to get its usual thickness and consistency?

    Tina,
Funny you say that because Ellen is speaking at Tulane’s grad where I’ll be next weekend!!

    Kailey (SnackFace),
The oats blend pretty well in the blender, but it is chewier than a really liquidy smoothie.

    Marilyn ,
    Thanks for the mode tip!

    Lauren + Linda,
The smoothie was a perfect thick consistency. The ingredients did separate some overnight (actually it looked like the milk was on the bottom) but I just gave it a good shake in my to-go cup (or you could stir well) and everything was delicious again. It’s awesome to make them overnight! I don’t usually use frozen fruits though, but I did add 5 ice cubes and reasoned that if they melted any the oats would sop up the liquid.

    Hey Kath,

I only had my garmin for 3 runs before I decided to return it. Many people have trouble getting and keeping the satiellite in the city, due to the buildings, but also in central park. I didn’t have too much trouble, it took up to 3 minutes. But when I saw the ads for the sleeker garmin FR 60, I decided to return the clunky 350 and wait until the lighter version came out. plus it has a foot pod, which isn’t gps dependent and is supposed to be more accurate.
