My Little Sardine

Good news this afternoon!!

I got home just in time for a snack before I jetted off to prenatal yoga. Apple + string cheese! Yoga was awesome, per usual!

I nearly talked Matt into going out to dinner after I arrived home from my post-yoga walk home down the Downtown Mall. But magically we pulled this delicious pasta dish off in just 20 minutes.

Whole Wheat Linguini with Shrimp + Bacon in a Kale-Tomato Sauce

We cooked up some chopped local bacon and removed it from the pan before adding about 15 frozen/thawed-in-the-sink shrimp. Once they shrimp were brown, we poured over about 1.5 cups of tomato sauce (Whole Foods Red Pepper) and stirred in 2 cups of raw kale to simma down. Dumped over the cooked pasta!

I am in a TANK TOP on the porch after 8pm. Matt is digging in the garden. Totally lovin’ this warm weather!

    Why go out to a restaurant when you can pull off such a delish dinner at home! Very restaurant worthy! I am snuggled up in sweatshirt and wool socks…so jealous!

    Hooray! 🙂 A million times hooray!
    Our little one was NOT into the sono appointment- it hid the entire time and it made the appointment last almost 2.5 hours. WOWZA! And we still didn’t get a good picture! What a cutie you’ve got there!

    Happy for you that the baby is doing so well! I have a healthy eating question for you. Do you ever think about what you would do if you or Matt wasn’t so into all the tastes of healthy food? I think everything you guys cook and eat looks yummy but my husband only likes a very limited amount of things. It makes staying heathy with him around hard. I just wonder since you and Matt seem pretty synched up on the food front.

    I love the blog BTW. I just started reading.

      I really have no idea! I would probably do a lot more small portions with big side salads (which is what he did when I didn’t cook veggies in the first trimester!)

    love seeing your sweet baby bump! I need to backtrack a few months and figure out how far along you are, this is so exciting! I love reading up on other gals going through pregnancy, it’s like we’re part of an awesome club or something 😀

    and the linguine looks incredible! So jealous of your warm weather post 8pm, we got a few sunny days here in Seattle a weekend or two ago and now it’s back to feeling like November. ’tis life, I s’pose. I guess I can still break out a few of the Fall sweaters while it’s here!

    Oh I love a good pasta dinner. I don’t eat it too often but every time I do I’m reminded of how much I love it. It’s all about a good sauce like this one.

    Looks delicious, and your little one looks perfect! Isn’t it mind-blowing that a year from you’ll have an active, giggling, crazy new family member?! I still can’t believe Lucy used to be a tiny thing we saw on an ultra-sound. Life is amazing.
