My Deserted Island Meal

If I had to live on one meal for the rest of my life this would be it:

A Thick, Root Vegetable Soup

And red wine to top it all off – too bad I didn’t have any tonight!

I kept waiting to get hungry all afternoon to have a snack, but hunger never came! I guess it was the protein-heavy lunch. It must have been the perfect combo of food groups for my stomach today. Lasted me about 5 hours, which is unusual!

We ended up making my very favorite with our ‘leftovers‘. You guys know by now how much I LOVE thick soups. We baked the sweet potato for about an hour at 350*. 10 minutes before it was done we sauteed some chopped carrot, celery, and leftover bell pepper in a skillet and added 1 cup of leftover navy beans (you could use canned here) and a Pacific Creamy Roasted Carrot mini box of soup (the 2 cup kind). Then we chopped the potato into thick chunks. No need for an immersion blender tonight – it was the perfect thick consistency with huge chunks of soft vegetables. Seasonings: cumin, red pepper flakes, cinnamon, black whole peppercorns, and a touch of chili powder. Of course I added extra cinnamon to my bowl! Mmmmm!

This mixture made about 3 servings of ~330 kcal each. And what a HUGE bowl that is!

Dinner was 475 kcal, 16 grams of fiber, and 13 grams protein.

And here’s a different angle of my tiny pie piece of leftover ganache. So sad it’s all gone 🙁 Yes, that’s a tiny appetizer fork to go with the tiny piece!

I’ve got a fun day NOT planned tomorrow and I’m so excited! The only thing I know I’m doing is going for a nice run in the AM – it’s going to be sunny and 60* and I’ve been looking forward to a run all week 🙂

    Root veggie soups are my favorite too!!!

    I think I’m going to make roasted beet soup on Sunday with goat cheese.

    Hey girl, looks like your blog has really taken off! Glad to see you are doing so well and scoring such great grades in school!! Lately I have ventured into the area of homemade yogurt. It is pretty easy and not many ingredients. Not near as good as Greek yogurt but it is super cheap to make! Anyway, glad to see you are doing well, miss you on CK! Your new site looks great, I love the recipe links on the right, that is a neat idea. 🙂

    Do you buy organic milk/dairy products? I have been reading about milk and cows (sounds funny but it is serious)… and dairy farmers even milk the cows when they are pregnant so they have all the hormones going plus the natural hormones too.. I read it in “Eat, Drink and be Healthy” and I am just shocked.

    Once you become and RD, would you have to follow the mypyramid plan? For example, would you have to recommend your “chewing clients” to have three glasses/servings of milk/dairy products a day as the government states or could you use your own judgement and go against the gov. recommendations? I was not sure since you would be registered and they would be the authority.

    I second what Kirsten said…so jealous of your weather!! ha…I woke up to 0 degrees this morning..brr…but usually March brings along some warmth, so we’re not too far off from warmer weather. 🙂

    Your soup looks so warm and comforting and delicious! I’m adding that to my “need to try” recipe collection. 😀
