Dinner for Breakfast?

Smoked Salmon, Zucchini + Provolone Frittata

I’m so used to having frittatas for dinner that it didn’t feel like breakfast! We are all out of dairy. It’s funny that I used to make my oatmeal with water for years, but not that I’ve grown to love it made with half milk, I just couldn’t picture myself eating it “the old way.” I was going to make an oatmeal pancake instead, but then I saw the leftover smoked salmon – fritttata in the making! Luckily we had a half a tiny zucchini left in the veggie drawer and some provolone cheese – instant gourmet breakfast!

This guy was 2 whole eggs, 1/2 a cup of egg whites, ~3 oz smoked salmon, 1/2 a small zucchini, a big handful of dill, and 2 slices of reduced-fat provolone, sliced and placed on top. Watch the video for cooking instructions! For this guy we just had to cook the zucchini a little then everything else went in. It made 4 pieces, 100 kcal each. I ate two!

We made coffee without thinking and realized we were out of milk! The husband drank his black but I’m not a fan and was trying to think if there was anything I could add. Another bright idea – Carnation Instant Breakfast is made with dehydrated nonfat milk!! So I added half a packet – presto – creamy chocolate coffee.

This breakfast was ~385 kcal, 9 grams fiber, and 31 grams protein. We’ll see how long it holds me with these proportions.

We’re planning a run in a bit and then a trip to the grocery store!!

    That’s a delicious weekend breakfast. I literally haven’t made a frittata in years…I’ve gotta try this again. It looks yummy.

    Kath, you’re so creative…I don’t think I ever would have thought about adding carnation instant breakfast to my coffee, but that sounds so yummy.

    what brand/types of low-fat cheeses do you recommend? i have a chem test tues! oh lordy! hope i can even come close to you!!! you need to come and visit IU’s campus. We have this great place called Bloomingfood’s! I really think you’d love it from reading your blog!

    Do you ever eat candies (the candies you suck on, such as life savers). I find if I am bored I can literally put a pack away and constantly want something in my mouth. Any suggestions?

    Like you, I am a student. I know you said that you go to bed at 9 and fall asleep around 9:30. Now that you are back in school are you really able to relax from 9-9:30. I would be constantly thinking about exams, papers, thinking I shouldn’t just be lying in bed. I would like to try your early morning routine, but I know that will be my reaction. thanks and enjoy your weekend!

    p.s. your grocery shop didn’t ruin what you are going to cook, I still have no idea what you will combine all those items for!

    I like all kinds of reduced fat cheese. We buy Sargento a lot because it goes on sale frequently.

    Lindsey,
    If you don’t have the candy, you can’t eat it. Get rid of it and get yourself a fun water bottle filled with water + lemon to sip on when you’re bored. Sounds boring, but having water really does keep your mouth and hands busy. Have you tried True Lemon and Lime? Google it – I love both kinds to add to water.

    As for getting to bed early, you have to wind down earlier than 9:30. Put on your PJs, take a bath, dim the lights, read a good – all around 8:30. It’ll help calm your body and mind.
