Movin’ To The Country

Gonna eat a lot of peaches!!

The Vita-Mix for TWO servings

  • 4 small chopped peaches
  • 1 cup ice
  • 1.5 cups vanilla soy milk
  • 1/4 cup Vega Smoothie Mix
  • 1/2 cup raw rolled oats

Toppings for one:

  • 1/2 crumbled Alliebar
  • A blob of coconut butter + sunflower butter sauce that did not melt like I wanted it to because we have no microwave!

    I love that song too! It reminds me of when my husband…he used to sing that one to me jokingly! The smoothie sound delicious. I have really been loving the peaches lately myself! Have a great one!

    Thanks for the memories! I am remembering ski trips in middle school listening to that album on my diskman with my very first boyfriend- Peter- who I was scared to talk to!!!! HA! We just sat on the bus listening to the album over and over again!!!!!!! Too funny.

    Peaches right now are so so so yummy!

    I’m back after a week in the OBX and just have to say it is so weird seeing you eat the same local foods (Twin Oaks Tofu!!) that I eat and go to the same places I like to go when I visit C’ville. I don’t think my mind has caught up with the fact that you live there now!

      That’s funny – I thought the same thing when I read this post. It was only RECENTLY that my husband and I heard it playing somewhere and I sang along… he looked at me and smirked. I knew I must’ve been singing about something that was not what I THOUGHT I was singing about! Kath’s post made me laugh because she also wrote “No bananas, just peaches.” Too bad EVERYTHING gets turned into something sexual these days… it was a catchy song!

    I can’t wait to see all the ways you will use your peaches. A chopped peach in a salad might make a great lunch option! 🙂 And I’ve been really into a chopped peach with some granola and almond milk for dessert.

    I’ve been a bit of a peach fiend as well as of late. I like to roll with the seasonal produce. I’m always impressed with your SIAB toppings, love the idea of blending coconut butter and sunflower seed butter!

    i currently have a 2-3 peaches a day habit. i was on the eastern shore of maryland this weekend, and there are farm stands every few miles with the freshest, most delicious peaches i’ve ever tasted. obviously as shown by my new blog name, im quite a fan.

    love the new header btw! didnt have a chance to tell ya yesterday! I love hiking trails, the closest one is about 40 minutes from my house but it is in the cutest, quaintest town so its such a treat whenever we get to go. I am definitely an outdoorsy girl! I absolutely love being outside.

    I don’t have a microwave either, and when I want to melt some peanut butter or whatnot, I do a little bit of MacGyvering, even though it might sound like more work that necessary…double boiler! I just boil some water in the kettle, pour it in a small bowl, and put my bowl of pb on top, and let it sit for a few. Softens up nicely!

    Hi Kath. I just got myself a french press and was wondering which brands of coffee do you drink and if you can give me any tips on the brewing process? I was never too good with a regular coffee maker so I am hoping the less technology the better for me. Thanks. Love your posts as always.
