Mother Of All Mahi

Happy Mother’s Day Dinner to Karen!

Her present was….

Nuttzo!!!! She LOVVVVEEESSSSSSSS it!! She bought a case of 4 and was on a hiatus until she felt she could afford it again. She said she plans to eat our jar by the spoonful when she gets home tonight!

We also gave her some Livin’ Spoonful crackers – she loves those too!!!

I got my mom some OpenSky goodies too but she will have to wait to get them because we had to cancel our MD picnic hike we had scheduled for today due to the traveling going on in the next 48 hours.

The Bears have yet to acknowledge that it’s Mother’s Day 🙁

Matt did bring me a glass of wine while we were out chatting!

Dinner tonight was Deconstructed Fish Tacos with all the fixins!

Matt seared up some mahi in a dry-rub seasoning

We had sautéed green cabbage and green peppers for the base…

…and Food Should Taste Good Blue Corn chips – a new flavor! They were nothin’ but good.

Condiments: avocado, mater, greek yogurt

And the final jar of the Don Sabrosa’s to sample – Blueberries, Peaches & Honey. OMG!!! BEST. Salsa. Ever!!! It tasted just like hot salsa with honey. Mmmmmm sweet and hot! And I didn’t even care that there were onions! I’ve never been able to eat salsa because of my taste problem, but the Don Sabrosa’s are really onion-friendly. If you dislike them, you will probably be fine eating these.

I’d say I got in sufficient relaxation this weekend – and probably my busiest week ever coming up. Let’s get ready to rumble…

    That salsa looks fantastic!
    I’m so sorry to hear about your grandmother. Have a safe flight to Jersey. If you need any recommendations for restaurants or anything (not sure how long you are there), let me know. I grew up about 30 minutes from where you’ll be.

    Great looking dinner too, I like the sounds of everything but the watermelon. 😉

    I think Food Should Taste Good makes the most amazing chips–I’ve only tried the multigrain but they are just SO addictive and delicious!

    I actually bought some watermelon today and I’m really looking forward to it – even more so now! I love the idea of doing deconstructed tacos and doing it with chips! Looks delish!

    Kath – What are your general thoughts about the Vega Vanilla Chai Protein Powder? I want to try it, but don’t know any stores in Charlotte that may sell individual packets. Any suggestions? Also, do you think that the flavor of the protein powder is bitter or has any aftertaste or anything like that? Do you feel that it tastes tremendously different from other protein powders?

      Healthy Home Market has the individual packets! I really love the Vegas, and the Vanilla Chai is awesome. There is no aftertaste or bitterness, but it does make the liquid a wee bit gritty – but very fine grit, and I love that about it. It’s also on the sweeter side.
