Meals Are More Fun With Bears

Lunch held me over well today – I think it was too much produce in one sitting! 😳 I didn’t really want a snack until around 5:15 when I was packing my lunch for tomorrow I got slammed with hunger and needed carbs.

Enter the hunka hunka burnin’ loaf:

Had a couple of bites off of him. Hit the spot!

I decided to take tonight to relax, since yesterday did not leave much room for any. And it was a rainy day, so a great day for a rest. Came home and got to work on some of my projects. Not exactly relaxation, but helped clear my brain from some of the things building up while I’ve been busy at my internship.

I also decided to MAKE DINNER tonight!! I’ve put together some simple suppers, but I haven’t made a real dinner in ages – thanks to Matt! I really enjoyed cooking. I miss it!

Coconut Mango Tempeh Stir-Fry

I enjoyed a coconut water and seltzer mocktail while I cooked 🙂

Folks, this is tempeh. It’s like mushed together rice and grains (I buy Lightlife’s Three Grain Tempeh) It tastes like of earthy like mushrooms, a bit like chicken, but mostly like rice.

I used 2/3 of the block in dinner tonight –

And used some of this coconut oil as my saute oil. I MISS COCONUT BUTTER!! Haven’t had time to re-stock or attempt to make any. Sadness. (We decided not to use the other butter – it was a bit old)

Tempeh was sauteed with a veggie mix of bok choy (LOVE!), broccoli, carrot and red pepper – with mango and coconut and tamari and salt and pepper. A side of brown rice.

And a drizzle of honey! Matt’s idea. Quote: "Meals are more fun with bears."

I wrapped up in Oncology today (really enjoyed it) and move on to Cardiology tomorrow.

    I had some tempeh tonight too…but just grilled plain. I thought I hated the funky flavor but now I am finding that I LOOOVE it. The tropical stir fry looks great.

    I thought we were gonna see some little bears in this post 🙁 Where did they go?? They still owe you some Mother’s Day fun!

    I’ve actually never tried the 3 grain tempeh! I thought they would all taste pretty much the same but you’ve convinced me to give it a shot 🙂

    When you add tempeh, do you do it mostly for the taste, the texture, or the foreseen nutritional benefits?

    I admire your dedication to cooking. It is a habit I sometimes slip out of and then “throw-together” meals are what ensue. Not as fun.

    What is tempeh texture like? I find that texture tends to be my biggest issue when trying new foods, not usually the taste!

    Kath, that rainbow stir fry looks beyond fabulous! I love all those colors! And I’m such a fan of tempeh. I usually use it as “meat” in pitas with greens and veggies, but I’ve actually never tried it in a stir fry before… great idea!

    I love your description of tempeh – I’m always trying to describe it to folks, and I usually make it sound terrible.

    I had some tempeh tonight, too! I really like Lightlife’s flax tempeh. I know you probably know this, but I thought it’s worth mentioning. Tempeh is not only a mixture of grains, but it is also a fermented soy product. However, those that have tummy troubles with tofu don’t always experience the same with tempeh. Because it is such a great source of vegan protein (and fiber!), I thought it was worth repeating. I know that many people don’t know what it is so I’m happy that you took the time to explain it. What a yummy superfood! I love your blog and am inspired by your meals every day! Could you possibly recommend a good vegan alternative for greek yogurt when you pack salads? I’m guessing that you use it for the protein, so maybe beans? Thanks!

    I made a vegetarian chili the other day using half of my block of tempeh. Just about made my Sunday school class gag when I told them what it was. If I was to describe it, I would have said it tasted like salty toast, but I tried it after sauteing it with worcestershire, chili powder, and oregano. I like your description much better!

    I’ll need to think of what to do with the rest of my block before the week’s over! Maybe I can finally pull out that can of coconut milk!

      I was preselected for my internship and did it through the school where I got my DPD so it was a bit easier for me. I was able to bypass the official match. But overall, the whole thing has flown by and I’m so very glad I did it.
