Lite & Bright

IMG_1241Blog

Fair morning to you! I fell asleep and missed a lot of Return of the King last night. I’ve watched about 50% of the series this week – missing parts from snoozing and blogging!

IMG_1235Blog

I had a bit of a lighter breakfast today because I’m going to brunch at 11am with some friends. Still had to have enough to tide me over though! Brunch is so complicated. It only really works if you sleep in really, really late and then get up and go!

Smoothie pudding [named for its thick consistency] made with 1 cup of kefir, 1/2 cup pumpkin, half a banana and cinnamon. Topped with some pumpkin chocolate chip muffin.

IMG_1239Blog

Pumpkin Spice tea on the side! Topped with frothed foam!

Have a lovely day!

Yum! Could that be made with milk or yogurt something else instead of the kefir? Do you make it in a blender?

Yup – milk and yogurt 50/50 would work great. I did make it in a blender

Yum! I love the orange color…I had a thick, thick banana smoothie layered with pumpkin challah bread this morning. Hooray for pumpkin!

Kath, I want to make a gorgeous pumpkin cake for Thanksgiving with buttercream/cream cheese frosting. The frosting on your bday cake looked PERFECT. Could Matt divulge the recipe or point to a similar one??? *Puppy dog eyes*

You’re so right Kath. That’s the only thing I dislike about Brunch. I’m either really starving by the time I eat, or not really hungry yet because I had a pre-breakfast. Hope you have a nice day!

Also, that pumpkin chocolate chip muffins looks so good. Such a good flavor combo (almost as good as peanut butter and chocolate).

    Enjoy brunch 🙂

Brunch works well for me because I am not immediately hungry when I wake up, so if I do wake up early (which doesn’t normally happen on the weekends, haha) I still have time to drink coffee and get ready before I even start thinking about food.
Love the burst of yellow this morning, it’s waking me up!

I can never sleep late so when I do brunch with friends its more like a really early breakfast and then a really early lunch (the actual brunch). Ha! Oh how I wish I could sleep in!

I feel the same about brunch – I get so ravenous while waiting for brunch time to arrive (and inevitably waiting in line when we get to a place) that I am tempted to over-order and eat beyond fullness and then feel lethargic for the remainder of the day. Much better to “pre-feed” on a light breakfast!

I had the same dilemma today – I had a baby shower brunch to attend, but woke up at 7:30, and knew I’d be STARVING if I didn’t have something before the shower. I had a simple little bowl of oats (no toppings) to hold me over, and it did the trick! If only I could learn to sleep in!

So true about brunch!! I’m a naturally early riser, so the brunch option is basically out for me most of the time. I’m not someone who can get up and wait a couple of hours to go out and eat with friends–I’m starving as soon as I wake up!
