Limelight

I woke up running to the kitchen to make oatmeal!! Part of that was mad hunger, and part was just pure excitement for strawberries, cottage cheese and Sunbutter! I was also extremely thirsty and had to chug a mug of water first thing.

Today’s exciting bowl contained:

  • 1/3 cup oats
  • 3/4 cup water
  • 1/3 cup milk
  • 1/2 tbsp chia seeds
  • 1/2 banana
  • 5 strawberries
  • Splash vanilla, stirred in at end
  • 1/3 cup cottage cheese, stirred in at end
  • Toppings: Nuts About Granola and Sunbutter!

We had a little bit of oatmeal soup going on, but I like it that way : )

    Lol sometimes I wake up on the weekends, and because I don’t want to get out of bed right away, I’ll lay there for a bit. But before I know it, I’m practically running to the kitchen as you described because I’m so excited about breakfast! Have a great day Kath!

    I love all your tea towels! And your patience, there’s no way I could set up a photo shoot before eating my oats – I like to dig in right away while they’re piping hot!

    Hey Kath, I am wondering if you can really taste the cottage cheese? I am not a big fan of it by itself, but do not mind it when I use it in a dish like Mac N Cheese. I would like to add it to my breakfast for extra protein, but am hesitant to add it to my oatmeal!

      Yes, you definitely can taste it. It’s more like a cheesecakey flavor and not the straight-up pungent cottage cheese taste like if you had a spoonful. Start with just 1-2 tbsp and see how it is

    That oatmeal looks amazing! I don’t like cottage cheese on its own, so originally I assumed I wouldn’t like it stirred into oatmeal. But for some reason, this morning I remembered how much I LOVE an orange-flavored cottage cheese dish that my family makes, and realized that I might actually enjoy it added to oatmeal. A whole new world of possibilities – now I’m excited! 🙂

    The anticipation of breakfast is what has always encouraged me to get up in the morning! As a child, I loved my stewed prunes/1/2 a gratefruit and a bowl of cereal. Over the years, I have moved to combining my fruit and cereal together…much like you do! Breakfast is the most important meal of the day…and my most favourite…a win/win!

    I have never tried cottage cheese. I see it in so many dishes that sound really good but I’m always nervous about not liking it. Maybe this will be the weekend that I finally try it 🙂 for some reason it just doesn’t sound appealing on its own.

    Hey Kath,
    love your blog so much 🙂 find it so inspiring. You are so organized. Do you think you could do a post on how you organize your meals (meal planning) and grocery shopping etc.? You always have so much variety, and was wondering how you keep it all organized.

    Man I could really go for a hot bowl of soupy oatmeal right now! I went to spin before work and ate a budi bar for breakfast. They’re awesome BTW – you should check them out! They usually keep me full for hours, but I’m not used to working out before work and I’m so hungry!

    Hi Kath, I have a question regarding caffeine while pregnant. I am not currently expecting, but that is down the road for my husband and I (at least, I am hoping so!). BUT, one thing I am a tad concerned about is that I adore all coffees and teas, and I know caffeine is a no-no. Did your Doc say that caffeine-free was ok? I know there are still *small* amounts of caffeine still, but does that matter?

      Caffeine isn’t a no-no, but it’s advised to stick to 200mg or less per day. Caffeine free tea is totally fine, so is decaf coffee. I drink black tea (40mg-ish) without hesitation, and I’ve had several cups of regular coffee – just one at a time and not everyday. But the research says 1 cup a day of regular is still fine (just not a grande from Starbucks!)

        Starbucks actually has a size for hot drinks only called “short” that isn’t on the menu but is the perfect size for me: 8 ounces.

    Your breakfast looks delicious as always. I also had strawberry oatmeal this morning and wanted to add some cottage cheese, but forgot. I’ve seen it here before and I’m a big cottage cheese lover so I’ll have to remember the next time I make oatmeal. Thanks for the great idea though…you’re my inspiration when it comes to healthy and delicious breakfasts 🙂

    I didn’t even like oatmeal until I started reading your blog. Now I crave it! This morning I had a strawberry oat bran bowl with chai spice. It’s such a comforting way to start the day! Thanks for posting such great pics to inspire real food eating!

    I like to rotate all my nut/seed butters on oatmeal in the morning – but I’m always sad when I run out of sunbutter and move on to almond butter, etc haha! Looks super yummy!

    Hi Kath! I love reading your blog and trying new things to make my diet healthier…esp love the breakfast posts. One dilemma I haven’t quite figured out yet…what do you do with the other half of the banana!? It always winds up going brown and I hate throwing it away. So I either wind up using the whole thing (too much) or leaving it out altogether. What do *you* usually do?

      It goes right in the fridge – still in the peel – to be used the following morning!

          I just keep it on so I don’t have to wrap it in anything. It doesn’t really turn brown in one day
