Let Them Eat [Pan] Cake

Pancakes, as promised

I made a sauce with the Kodiak raspberry sauce (SO FRESH) and some Organic Valley Yogurt Drink Vanilla – plus chia seeds!

I heated the strawberries so they’d soften and topped it all with a blob of Maranatha Dark Chocolate AB! Mmmm! The yogurt-raspberry sauce was SO good. And the choco-strawberry combo a perfect blend as well.

I stayed up late last night working. The cons (and pro!) to being self employed. But it means today I have a WIDE OPEN agenda!!! I just packed my lunch for tomorrow, so the rest of the day will be spent reading, watching House Hunters International, going to a 2:15 hot yoga class, biking to Karen’s, lounging by the pool and cooking burgers for dinner! Excitement!

I won’t be back with another post until this evening. Have a WONDERFUL Sunday!

    Have you ever read anything by Michael Pollan? I had to do a lot of driving this month, so I took the audio version of “In Defense of Food” out of the library. Super interesting so far. I think you’d find it interesting. His front book slogan makes me think of you. “Eat food. Not too much. Mostly plants.” If you haven’t read it, I’ll keep you posted! If you have….any comments?

    Perfect Sunday morning breakfast! And those strawberries look amazing!

    I have a quick question for you… I’m looking to buy food storage containers (like tupperware) to replace some cheap Ziploc and Glad ones that I don’t like at all. I was wondering if you or anyone else had a suggestion for good containers that can be used to store produce, leftovers, etc. as well as freezer and dishwasher safe?

      Hmmm… I don’t really have a recommendation. I’d try a store like Crate + Barrel or IKEA to get some nice ones that will last. Or OXO brand?

        I would suggest getting a set of glass storage dishes with plastic lids. You can have them in the fridge, freezer, microwave or oven (sans lids) I would avoid wasting any money on plastic containers. Plastics can leach chemicals into your foods if they are heated in the dishwasher or microwave or from hot foods. You can get a large set of Pyrex or anchor
        brand for around 20 bucks at wal-mart.

    I live in WI and happened to find Kodiak mix at Cabela’s…of all the places! Not sure if they carry it in all of their stores but just wanted to mention it in case anyone else is looking for a retail outlet.

    I love the yogurt sauce on the pancakes. I usually use applesauce and I always add fruit to my pancakes.

    Hi Kath, I’ve been following your blog for a while now and really enjoy it. Question: you put chia seeds on a lot of things…what is the health benefit of them? Or do you just like the taste? (And what the heck do they taste like?)

      I like their texture. They get kind of FLUFFY in liquids. Like they have a fur on them. They are super nutritious too – protein, fiber, omega-3 – you can find out more online.

    If you had a 5 hr layover in Charlotte….what would you do with it? Can you tell me some great things worth leaving the airport for?

      I’m not sure anything would be worth leaving for 5 hours. Would you rent a car? Cabs are pretty expensive here. If you definitely want to leave, I guess Uptown would be where I’d go. Or if the weather is nice, to the McMullen Creek Greenway for a walk and to Yoforia at Piper Glen for a snack (right at the trail head). But our airport has free internet, so I’d probably stay put with only 5 hours.

    For some reason I have been craving pancakes. Could it be I watched an old episode of Sabrina the Teenage witch where her family is not allowed to eat pancakes because they become obessed and will binge on them until they are 500 plus pounds? Or is that damn IHOP commerical I keep seeing? Who knows?!!? But by far, those pancakes looke delicious and healthy. Take that IHOP!

    Those pancakes look pretty and tasty! I NEED some Kodiak mix again. Our Tom Thumb was carrying both it and the brownie mix and now they’re gone :< Guess I'll have to break down and order from the website!
