Leftoverandoverandovers

Nothin’ like leftovers for a super fast and filling lunch! Matt and I spent hours discussing how much of each of the low country boil components we should buy and luckily we had more than enough – too much! I’m glad we’re still getting our money’s worth : )  I think this is the last day I would be ok eating the leftovers though – but my did they taste delicious all heated up with some ketchup.

Hot lunch eaten in the cool air! I went for a walk earlier and nearly melted. Thankfully I had a whole bottle of icy water to sip on the way.

    Looks like all the shrimp were devoured! (or you just weren’t in a shellfish kinda mood) Cantaloupe looks nice and juicy!

    We always have a hard time judging how much of each thing to buy for the low country boil. I always make chowder out of what’s left. Your lunch looks perfect for a summertime meal! Enjoy the rest of your day Kath!

    Ahh the neverending leftovers! As an RD, do you get nervous about finishing things up within a certain time? What’s your limit? I know some who are die hard food safety people and others who are much more lax about it.

      I am definitely more lax than the average person – hoping all the healthy bacteria and a good immune system will cover my butt. I’ll eat things on the border, but I would never take a risk with something that I KNEW was contaminated or smelled funky or sat out beyond the recommended limits.

    Leftovers make for tasty meals…looks great! That cantelope looks amazing! Big thunderstorms keep rolling through interspersed with sunshine…hope the power stays!

    You could cut some of that corn off the cob and put it in one of your tossed salads! Make a shrimp dip w/ cream cheese/pecans/hot sauce, or a chilled shrimp/rice salad.
    Or you could just send the leftovers to me! I would die to have some of that right now. I am headed to the farmer’s market at 4:30—to see if the guy is there selling shrimp! You have me craving it now!

    Hey Kath,

    I wanted to ask your opinion on eating out…

    Do you think eating out consistently can cause weight gain? Many people eat out at least four or five times a week and have very slender figures. Is it just about being mindful about what you order and also living an active lifestyle or can eating out too much in general just cause weight gain regardless of what you order?

    Also, dessert for me out is an occasional treat. Definitely not everyday..

    When you order food out, how do you choose a healthful meal?

      The only way to gain weight is to eat more than you burn. The problem with eating out is that there are so many hidden calories – in the form of oils and fats in the cooking – that makes it hard. Could you “eat out” and get a salad with dressing on the side topped with some protein perhaps a roll from the bread basket and LOSE weight eating out – absolutely. You just have to be careful ordering the dishes that are finished in oils or swimming in butter (these can be gourmet too – like fancy mussels! Doesn’t have to be fast food).

        On the subject of eating out, I notice you never mention going to Taco Bell or whatever. What are your thoughts on it? I do my best to eat real foods and shop healthy for groceries. I “hear” Kath in my ear when shopping. LOL

          I really have no desire or taste for fast food. Plus the meat used is not something I’d like to support. I wouldn’t be opposed to a Wendy’s baked potato or a salad from one of those places and the higher end places like Panera and Chipotle are places I sometimes go, but for the most part, I feel like my meals on this earth are numbered and I want to eat as high quality foods as possible.

            I agree completly Kath. I guess I just needed reassurance that I am not too finicky. I despise fast food. I also dislike food in a box ie…frozen dinners.

    I swam yesterday (like you I really struggle just getting to the pool and once I’m there I always really enjoy it.) Anyway, I’m 32 weeks pregnant and swimming felt great and was such a nice reprieve from the heat. Just a random thought in case you hadn’t been swimming lately – I encourage it!

    I finally had a Low Country Boil for the first time this last weekend. It always looks so good on your blog, and it tasted even better! I wouldn’t mind eating it as leftovers either, but my family devoured it so quickly, there were no leftovers. 🙂

    I had a ton of leftover corn after my Memorial Day party and cut it all off the cob- and froze it! I know it sounds weird, but eating frozen corn kernels is SO good!

    The cantaloupe just reminded me that we have one waiting to be cut up in our fridge! We’ve had so many different fruits in my house this summer, yet somehow no cantaloupe yet…I should go cut ours up now!
