Leave Only Footprints

Gorgeous afternoon!!

The skies opened up into Simpsons clouds and we had a perfect afternoon for a beach walk!

Followed by an even prettier evening!

For cocktail hour we had guac and chips. Matt made this guac with 3 avocados and about 1/3 a cup of greek yogurt – it was incredible! Love the yogurt twist. [Plus salt, southwestern seasoning, lime]

Our final night was a hybrid between home food and beach food: Whole Wheat Pasta with Zucchini, Tomatoes and Fresh Clams in a White Wine Butter-Garlic Sauce

    I am so happy that you got some nice weather and enjoyed your walk, I must say that those clams with veggies look incredibly tasty, honestly this is the best photo of photo I saw in a few months, I want to recreate it pretty badly, can you please post the recipe?

    The White Wine Butter sauce — I can almost smell it from here…wow, I bet that dinner was amazing! And the view at sunset; the sky is almost lavender. Beautiful!

    Did you dig the clams yourself? We dug almost 100 when we went to Mexico in March, the kids had a blast! Made some yummy clam chowder and a seafood & veggie pasta with a wine and butter garlic sauce. Your dinner looks delicious, as does the guac and sundae! The last day and night of vacation are always difficult, it’s hard to leave but I always look forward to getting back home.

    Great combo on the guac. I love using Greek yogurt in recipes. Also, I’m trying to add more avocados to my life. So good.
