Lately: Intermission

I’ve really been on a roll with the healthy eating and weight loss. I stepped on the scale and had lost 2.5 pounds! Karen just had a minor surgery to repair a hernia and she spent a few days recovering at our house. Although we cooked healthy Cook Smarts dinners, there was still a feeling of having company and we ate more than usual. I’m having trouble resetting my buttons!

Breakfasts

Leftover eggy casserole with strawberries and toast with jam. Mazen now asks for “toast” in the morning instead of “bread” but he gets mad if I put his bread in the toaster oven!

The next day I scrambled up a bunch of eggs with toast and mango slices. Mazen loves mango slices!

An oatmeal celebration in my bowl – whipped banana oats made with oat bran and a lovely puddle of sunbutter on top.

And lastly, a smoothie made with berries, banana, milk and chia, shared with Mazen, and toast with butter.

Workouts

S: Our last soccer game of the season! I played one of my best games and woke up the next day with super sore legs.

M: Rest day! Just walked to the gym and back in the afternoon for baby swim class : )

T: Small group with Erin. Class was focused on lifting heavy instead of boot camp style. I left with my total body fatigued! I also did 20 minutes on the stairmaster to warm up. Sadly we had to drive due to rain.

W: Athletic conditioning day. I don’t even remember what we did the most of, but it was a good class!

TH: I had mom’s morning out at the gym, so I moved my workout to right after and before nap. I worked in a coffee shop and after picking Mazen up we went for a run (about 4 miles) before heading back for lunch. He’d already had lunch at the gym so this worked out well! I was starving for mine but the time I got him to sleep.

F: Stairmaster warm up plus training with Erin. We did some big moves with Olympic bars that made me feel like I was in a CrossFit gym. (So I think because I’ve actually never been in one!) Also she had me working my biceps in a way that left me SO sore the next morning.

SA: Athletic conditioning, Saturday style. Except that 20 minutes in I hurt my back!! I was rolling up from the ground and my back kept going but my butt was glued to the ground and I felt something pull. I left class and found an ice pack and was shocked that the next day everything felt fine. I’ve been taking things really easy, but I don’t think there’s any bad damage.

Lunches

Leftover taco salad. I couldn’t get enough of this and had the same thing I had for dinner the night before.

A Great Harvest picnic at the mall! Matt met us there with sandwiches on a rainy day while he was out running errands. I had a pimento cheese sandwich (half) with dill pickle chips and a bite of brownie.

Dinners

Cook Smarts was a really fun week!

M: Mediterranean Chicken Packets with couscous and cucumber yogurt. I LOVED this dish! The chicken was well-seasoned with herbs and paprika and served over whole wheat couscous with red pepper, olives and lemon. Plus a cucumber-yogurt sauce on top. Obviously the yogurt on top won me over.

T: Turkey & Pica de Gallo Tacos with cumin and coriander carrots. We all loved this – Karen and Mazen included! The turkey was a fun change from beef and the carrots were so sweet and savory!

W: I went to The Scout Guide party while the boys cooked with Karen. I helped them make the Eggplant and Zucchini Saute over couscous before I left and had a taste – yum!

TH: Taco Salad with paprika vinaigrette and YOGAMOLE! We used the leftover turkey saute from Tuesday for this and turned it into a big salad. Instead of quinoa we had chips and lots of yogamole on top!

    Your scrambled eggs always look so fluffy and delicious. I wish I could get mine to look like that! Have you ever done a post on your method?

      I don’t think I have. I use a dash of water in the egg “batter” and a nonstick pan. And a spatula and I don’t scramble them too often.

          I should do more videos – but it’s extra hard with my videographer working so much during the daylight hours : ) That leaves Sundays, which we try to use for our day of rest. But you’re right, I should make more effort!

    I always enjoy looking at your meals because you find such creative ways of getting loads of veggies into the plates. Did I spot chia seeds in your pancakes too? I want to try that.

    2.5 lbs – that’s really awesome. I’ve been on a roll too and it feels good! I feel like I’m back in the zone a la CK 2008.

    Also I have so much more time to comment on things without Facebook in my life anymore.

    Does M love swim class? I finally was able to get my kids into swim and it starts in a month. I can’t wait.

    I’ve been craving GH bread the past few days and the gods smiled upon me because I found one last slice of Irish Soda Bread in my freezer yesterday morning. I’m sure of all people you can understand how I felt about that 😉

    I cracked up at Mazen asking for “toast” but not wanting it toasted. When I was little I would eat toast every morning. My younger brother asked for “toast, but don’t cook it!” 🙂

    i just have to say, i LOVE when you do these posts. they give me such great inspiration for what to cook and eat throughout the week. you and are similar with breakfast…once i became a mom, eggs just got SO much easier and they really do fill me up more than anything else. it was great when my daughter was mazen’s age because she ate eggs pretty much every day with me…my little guy now, he doesn’t eat them as much. but, yes, i just wanted to tell you how much i love these posts!! 🙂 thank you for sharing!! they truly are helpful!

    The creamy paprika dressing for the leftover taco salads was CRAZY good. Seriously, I couldn’t stop licking the spoon once it was done. I can’t believe 3 TBSP of fat-free Greek yogurt could do that to dressing. I wanted to drink it!!!

    Hi! First of all, this blog post is solid! A complete health guide in one post is amazing. I love all of the meal ideas except for maybe the mango for breakfast. I personally don’t like the acidity of mangoes to eat in the morning. It feels more appropriate for lunch time (personal preference only, though as I now A LOT of people who enjoys them during breakfast as well). Overall, great post!

    Looks like some good eats! Breakfast is always my favourite meal of the day, so those pics are particularly enticing! Also, I love leftovers on top of salad -so good! They’re always the best.

    Congratulations on the weight loss!! I think you look great anyway but it’s always nice to know when your efforts are going in the right direction!

    I was wondering if you ever eat any snacks after your workouts or does lunch tend to follow them?

      I usually go right into lunch but sometimes I have a Smoothie from the gym if my workout was really hard and I have to walk home too

    Ohhh nice job, Kath! It’s always fun to see progress in any form. 🙂 And you’re seriously a breakfast inspiration because you never fail to make me want to eat right after~but I try to refrain, haha.
