Last Night’s Dinner

Whenever I start to feel overwhelmed about all of the things I must do everyday to get healthy food on the table, I turn to Cook Smarts. Cook Smarts doesn’t pay me to say that – I truly love the service! When I’m running late for the grocery store on Sunday morning I have someone else do the thinking for me. Done and done. “What’s for dinner?” is a surprise each night.

We have had several great dinners lately – including this one made with cauliflower rice!

It was my first time trying it (this falls into the “I would have never tried this on my own” category. It was very much like real rice in size and shape, but I think I prefer the real deal for its texture. However, if you can’t eat rice for whatever reason, this was a great substitute!

Served with shrimp and peppers in a red curry broth. Yum!

The next night we made pork-stuffed cabbage rolls. I used beef instead of pork (because I already had some in the freezer) and they turned out delicious. Another lightened up meal for the win! (Unlightened by red wine two nights in a row <3 )

On the dessert front, Carpe Donut is trying out a new smaller version of their Frodo, a donut ice cream sandwich (yes!!) I love anything that comes petite sized, so this was perfect split and shared in two. They are hoping to sell these in grocery stores!

    I’m confused. When did you make these dinners?

    I was also hoping you could start posting about your daily workouts! Since you’re training for a race, I’d love to follow along with your training.

    I’ve heard of cauliflower rice but never tried it… you’re right, that’s definitely something that I wouldn’t try on my own but good to know it’s similar to rice!

    Your dinners look delicious! I’ve never made cauliflower rice before because it’s seemed more labor intensive than regular rice, but I might give it a try now!

    Those two Cook Smarts meals look awesome. I love that someone who is creative and prolific in the kitchen like you (and like me) can find services that make incredible meals more ‘fun’ by mixing up things you try – cauliflower rice for example!

    Hi kath! I am just wondering if you are going to start including topic based posts with your new kerf format? I just finds blogging every day about meals that are similar to one another tiresome. I am not being rude, I am just providing reader feedback as I have been a loyal reader since the beginning. I just have found myself blog about the same meal posts every single day. Could you maybe include some lifestyle or day in the life of posts? I love those 🙂

    We’ve done cauliflower rice a few times and I can’t get my husband on board. It’s annoying because he is the one who wants to go carb free, not me! I’m thinking that doing it with a sauce would make all the difference. I will try it one more time with a flavorful sauce and see what he thinks!

    How did you make the cauliflower rice? I’m envisioning either a ton of chopping or a blender. Maybe you could post a tutorial or a recipage? I’ve been wanting to try it out, I just don’t know where to begin.

      I used a food processor and just pulsed until is resembled rice! Super easy…if you exclude cleaning the food processor : )

    Oooh, I feel you on the meal planning. I spent about half an hour today planning meals for the next two weeks (we are trying to hit the stores less frequently so we spend less money – it’s working!), and then got all my groceries over the lunch hour. My husband and I also prep and cook our lunches for the two weeks all at once and then freeze them. I find it makes everything SO much easier. That cauliflower “rice” looks like it might be worth a try. We’ve tried black rice recently (delicious, with a nice bite) but I confess I bought a microwave packet of Uncle Ben’s brown rice today. Some days I just like to take the easy route!

    I love cauliflower rice! I think it’s especially good with just a little earth balance (or butter if that’s your thing) and some herbs!

    That donut!!! Yum!!

    I live in Canada where we just don’t seem to get the donut thing. I love when I’m in the States and can find awesome donut shops. And that donut in grocery store, totally unfair and dangerous 😉

    Cook Smarts may not “pay” you but you had to have gotten months upon months free when they were doing their referral program. I for one signed up through you so a little disclosure would be nice.

        I truly love the service and would be using it regardless. I will say that I might have resisted trying it if they hadnt done the first blog introduction so I am very thankful!
