Last Night In The Queen’s Kingdom

Karen did great!! She’s been in a jolly ole mood since we left the hospital – I think she is very relieved to have the surgery behind her.

I had to eat a Green Monster Muffin in the recovery room – I was starving and we were in no rush to leave! My gosh it was sooooo good!!

Once home I fixed Karen a snack including Oatmeal Squares and nibbled on some myself. Also "soooo gooood."

While we were out, Matt was making the most amazing soup EVER!!!!!!!!! (Yes, I’m in a dramatic mood tonight 😉 )

It’s called Summer Herb Soup and was worthy of its own recipe page –> Summer Herb Soup

Served with Trader Joe’s cornbread mix. Nothin’ healthy about it, but damn it’s good!!

So good I had a small portion of seconds of both!!

And after dinner –> a small piece of chocolate.

I have to blog quickly because my computer must be packed!!!!

    Glad Karen is doing well! Don’t you know, you justify the bad by accentuating the good in it…like there are food groups in there…like egg, milk, corn! Have a great night!

    It doesn’t even matter corn bread isn’t healthy. It’s made with wholesome natural ingredients, so in my book… there’s nothing wrong!! 🙂

    First off, I totally agree with Kacie–making green monster muffins just moved to the top of my to do list 😀

    Second, Trader Joe’s cornbread mix is THE BEST! And so easy to make too! Which reminds me, I think I need to go to TJ’s soon… 🙂
