Kath Goes Back To College

What a FUN night!!!! We had a blast watching the game with about 50 other Davidson alumni at a bar with a huge screen. And of course the fact that DAVIDSON WON made the night!! It was so fun to all cheer and yell together with every basket. We stayed out really late (12:30!), hence the super late post this morning. I also had a few too many sips of beer 😯 I slept until 8, but the husband got up at FIVE AM to drive up to Davidson to catch the bus to the Camden Cup. He’s nuts!

Dinner

For dinner I did a “build your own salad” with a bunch of veggies, avocado and shrimp.

We went downstairs for the party at 7 and the beer pitchers were EVERYWHERE. Took me right back to my college days. I tried to sip mine so I wouldn’t drink too much. I probably had a beer and a half during the game?

After the game we went Uptown to meet up with some friends at a martini bar. My girlfriend and I split this martini made with chambord – it was so. good. I don’t have martinis often, but when I do I really enjoy them. However, I definitely did NOT need any more alcohol. I blame my headache on this one 🙁

Our friends ordered some artichoke dip. I had about 5 chips and tried the dip. Staying up late means you need another snack! Too bad it wasn’t a healthy one.

When we finally got home I wanted to eat my entire pumpkin loaf but I ran upstairs and brushed my teeth before my hands could reach for it.

It was a fun night, but I wish I hadn’t drank so much. I’m a total lightweight and even though I only had a small glass of wine, a beer or so and half a martini, I slept poorly and feel rather dehydrated, achy and gross this morning. I HATE waking up not feeling my best.

Breakfast + Sweat

While our husbands are at the horserace, my friend Casey and I went to the gym first thing this morning. Pumpkin bread as a pre-workout snack (along with a big cup of water with fresh lemon juice)

I did 30 minutes on the Stairmaster, plus 15 on the ET and some stretching. As always, it felt good to sweat 🙂

We came home and made oatmeal. I made her Kath Classic version and she liked it a lot 🙂 I only made 1/3 cup portion because we’re having lunch in a few hours and didn’t need a full bowl.

    It looks like you had a fun night! That build your own salad looks fantastic, it’s such a great option to have. I wouldn’t worry about that “unhealthy” snack, it could have been worse. =)

    I’m a dedicated reader and a first time poster, but I just had to comment on how gorgeous you look in those pictures! You and your hubby look so happy!

    That said, I hear ya about the headache. I went out with my law school buddies to celebrate being done with our huge final project, and let’s just say the sangria was flowing freely. After weeks in the library it was nice to celebrate, but I’ve got to get outside soon to sweat it out!

    I’m a lightweight too (because I rarely drink) and I really, really hate that morning after achiness (one reason I rarely drink), it’s so not worth it most of the time.

    Chickpea cutlet advice needed!

    I have a lot of leftover cooked lentils, do you think I could sub them for the chickpeas? My worry is that lentils are so much smaller!

    Also, how do you all freeze them, mine got really icy in the freezer. I put it in one of those Tupperware type containers.

    Sarah F, you asked about eating more on the weekends. The bottom line is you won’t gain weight if your calories are in balance and I would say everyone eats more on the weekends because most people go to restaurants and bars on the weekend.

    I do have a question if you are supposed to eat 2500 calories how are you not starving on the days you eat about 800 calories less? For example, you said you eat a really small breakfast (250 calories, what do you eat that keeps you going on that- i would starve!)

    yaaaay davidson!!! i was watching the game at the gym last night and was so excited!

    as much as a drink is fun, i really really hate the hungover feeling the next morning. sacrifices!

    Kath, I just had to comment on how pretty you look in these pictures! You (and the Husband) look great in red!

    And I think you did AWESOME resisting temptation. I can’t beleive you made it through the whole night on just a salad and a few chips. Drinking beer always gets me in the mood for a cheeseburger! and fries! and anything else I can get my hands on…

    I also had a question for you about splenda. You mentioned that you aren’t sure how you “feel” about it awhile back. Could you explain what gives you pause about using it? Have you had any side effects?

    I have used splenda regularly for tea for about 3 years and just recently, abotu 1 month ago, I started getting BLINDING headaches. I have never had a problem with headaches before so this was really weird for me. I couldn’t figure out what it was, but when I stopped eating splenda they went away! Has anyone else had a similar experience?

    So Im sitting here drinking my coffee with hazelnut coffee mate in it. I know, bad right? I dont really care haha, I get the fat free kind so I feel better about it….and Im looking at your coffee with skim milk, and Im wondering why they dont make skim milk mixed with sugar free syrups or anything to make coffee flavoring yummy and healthier.

    I watched the game with a friend last night as well and we were so happy to see Davidson win!! We’re both really hoping they make it all the way. The remind us of Drake here in DSM, so we’re cheering for them all the way! 🙂

    Looks like you had a fun night…and congrats to Davidson! I know what you mean about the icky feeling the next day, though (I’m a lightweight, too!). A good workout always makes me feel better!
    I FINALLY made oatmeal pancakes this morning (can you believe it took me this long??) and they were so easy and tasty! This may just replace buying pancake mixes now since I always have oatmeal on hand!

    I didn’t used to be a lightweight but now it seems that anything over two drinks gives me a hangover. I wonder if I broke my liver.

    kiala – i’m with you on that for sure! i used to be able to handle my alcohol like a pro (not sure thats a good thing….), but now its like one glass of wine and i’m out the next day!!

    anyway, Kath (or anyone): is it possible to make the baked oatmeal with quick oats or does it need to be done with rolled oats?

    I always do 1 part oatmeal, 2 parts liquid (so 2/3 cups should be sufficient.)

    Congrats. those red shirts remind me of red sox nation red. Maybe they will win yet again. Heh heh. Yummy martini, glad you enjoyed a night of celebration. I’ve got my 10 year college reunion this year. Scary! Scarlet Knights, really is a red theme. Must order a red sauce at dinner tonite.

    I think lentils would work just fine. I haven’t froze mine so I’m not sure, but just wrap it tightly in plastic wrap and put in a freezer safe bag.

    Thanks so much for your sweet comment 🙂

    The reason I’m on the fence with splenda is that it’s artificial, yet they have not proven anything harmful about it like the have with other sweeteners and chemists have assure me that it’s a very stable isotope of sugar. But it is artificial. I only use it in coffee and tea on occasion so I’m kind of going by the “in moderation” school of thought on it. I would never want to use it in everything. I have read that some people get bad headaches from it, so it doesn’t surprise me that yours went away when you stopped using it.

    That would be a good combo! Or you could use the Torani sugar-free syrups with skim milk.

    You could use instant oats, but I’m not sure how the consistency would turn out – I would just try it and see, perhaps in a smaller batch the first time.

    in highschool i could drink about half of a fifth to myself and not get sick. Now if i have a glass of wine im flitting around saying “quite” and calling everyone darling.

    I use splenda, not because its zero calorie, but because it doesnt mess with your blood sugar. I have huge issues with sugar cravings after eating sugar, my system is really sensitive, so it keeps me balanced. there isnt any evidence that it is harmful, but people react to things differently. Im allergic, but carrots make my throat itchy. everyone is different.

    Also, Im going to come kidnap you and we will go play and drink and i will have you dancing on top of a bar pouring shots out of the bottle into people’s mouths by the end of the night. That is my new life goal.

    This is the best article I could find on the vitamin supplement thing!

    Basically, they studied two groups, one who took supplements regularly and one who did not, and in general, the lifespan for those who didn’t was longer… I wish I could find the original, sorry !

    My friends and I love mexican and I always get chicken fajitas and usually sub, black beans for refried when they have them! Yum! I had it last night with a BIG margarita (prob not the healthiest but delicious!!)

    Hey Kath — congrats to your team — we spent the last night of our spring break trip watching Davidson kick Wisconsin’s butt! There are some sad Badger fans here today, but well done Davidson and what a fun Cinderella story. I’ll follow them for the rest of the tourney!

    I was such a bad dieter on vacation and a total booze hound to boot! I sat on a chaise and sucked down cocktails for seven straight days. Fun while it lasted, but back to my best behavior tomorrow!!

    I usually get a tortilla soup or the fajitas – requested to be prepared without oil. Mexican is tough! Sometimes the taco salads can be healthy if you get them without all the high-fat toppings or the tortilla shell.
