Just Enough

Lucky me, I happened to find just enough veggies in our fridge to assemble a simple salad for lunch, along with yogurt and our sole piece of fruit.

Romaine, celery, carrot dressed in EVOO, sea salt and honey (only a drizzle of each) plus TJ’s Cilantro Jalapeno hummus and bleu cheese (the last)

    Mmmm that salad looks lovely! I notice you put honey on your salads a lot and I just found these honey crystals at the store yesterday and they’re perfect for sprinkling on salads. I’m trying to convince myself to go swimming tonight, too, so GO! 🙂

    Hmm…think of the freedom and feeling of floaty weightlessness of swimming..and think how MAD at yourself you’ll be if you don’t do it! One never regrets a workout 🙂

    Tell yourself that you will go for a swim for 10 minutes…if you’re not feeling it, you can leave. I guarentee you’ll want to stay once you’re in the pool and swimming though. 😀

    I did the same thing last night. Pulled all the little leftover fresh veggies out of the fridge and was able to make a small, simple salad for me and my wife. It’s kind of fun to completely clear out the veggie drawer, because now I get to start all over with exploring new finds at the grocery. 🙂

    Swim Kath, your so lucky to have that opportunity. The nearest gym is 45 miles-one way- from where I live and I just can’t make that trip. So swim for me, for those of us who can’t. HA, I am trying real hard to encourage you!

    My doctor just 86ed me from running, spinning, elliptical, everything but walking and swimming. Begrudgingly, I went this morning. Last night I planned a workout though, and that helped a great deal. I told myself that I needed to do the whole workout up to 45 minutes worth of swimming, whichever came first. It wasn’t so bad with a plan!

    i’ve learned from you that workouts can be the most relaxing time of my day. with all of your crazy weeks and weekends you have been going through you DESERVE to swim tonight. think of it as a gift to yourself for all the hard work you did today!

    I was tired from work this weekend…on your feet for 9hrs and a lot of heavy lifting. Sunday I went for a 15m bike ride and THEN went to work til 11:30pm…probably not smart! Yesterday, I really wanted to swim but was pretty sore + tired. I walked to the rec center and hopped in the pool. For the first 15min I swear the water was pushing against me…I stopped counting laps and just zoned out. I swam for 40min non-stop [except for a few swigs of coconut water ;)] and ended up having a great swim!! So this is me trying to push you to get your SWIM on!!!! You always think of your workouts as a fun game…so just think of it as a long game of marco polo 😉

    I love how strong and toned I feel after a good swim! I think it is one of the more “feminine” exercises to do. I always feel so refreshed and nourished. It is a great way to switch it up from yoga, weights, running, and eliptical. I usually pair my swimming with a great “stretch” session (totally guided by my own body and what it feels like doing:) Good lUck!!!

    You must have pretty sharp teeth, for all that raw chompin’. Cute portable granola and “dew drops” on the apple. Have a nice swim; it’s one of the best forms of exercise possible.

    I am having the same debate…to swim or not to swim tonight…I know it makes me feel so much better when I do, but getting in is NOT fun. Swimplan.com just developed a few thrilling workouts for me to choose from so I guess I/we better go tonight! Happy Laps 🙂

    i immediately thought of a song we used to sing in one of my summer camps when i was smaller…

    “swimming, swimming, in the swimming pool
    the day is hot, the day is cold, in the swimming pool,
    breath stroke, side stroke, fancy diving too,
    but don’t you wish you can have, ANYTHING else to do!”

    you really have to come over and teach me how to buy vegetables- you always seem to have enough, which leads me to believe you never throw them out! I always go overboard and every so often I end up throwing some rotting veggies or fruit out, which is not cool EVER.

    I miss chobani and oikos! We just have no super rich thick greek yogurts here in Australia. I wish globalisation would hit more speciality foods 🙂
