Just Beachy

Breeze in the air, balmy temps, sea grass – I think the weather is trying to tell me something!

Has it been 6 months since I last saw sand?

This morning’s Kodiak cakes may have been the best we have ever had!! We aren’t really sure why – but it may have been the addition of chia seeds to the batter. I would think they would plump with water and make the pancakes drier, but actually, the pancakes were super moist and sticky – just how I like them!!!

We topped our cakes with banana slices (some went into the cakes too!), Meg’s granola, Honey Crunch PB (which reminds me of the Nutty’s Butterscotch!) and coconut. Note the lone taco of batter drip on top!

    SO SO jealous of your trip to the beach!
    I was going to suggest you try out the recipe I posted this morning, sometime this weekend, but clearly you’ll be having much more fun. Lucky woman!

    Those cakes look so good — and I’m glad the chia seeds didn’t dry them out. I would have thought the same thing.

    those pancakes look so good and you really got me in the pancake mood….i think it’s time for a ‘breakfast for dinner’ night!

    I need to move away from Iowa…last week it was in the 60s. Last night we got 6 inches of snow! I thought Spring was on its way…bummer.

      I haven’t read the article for MD’s oatmeal, but I tried it and it was GROSS!! Too too sweet and not creamy at all..more like playdoh! Gag!!

    I finally bought Kodiak cakes last week after reading about them on here. I’ve never liked pancakes, but they are seriously so good. I added banana into the batter too. I had them again yesterday- twice in one week! To anyone else wondering if they’re worth it, they really are!

    I’m going to need to try out Kodiak cakes. The last time I made pancakes they turned out not so good 🙁 It was either the mix I used or I made a major measuring mistake! But I like to blame it on the batter 😉
