It’s All About The Honey

Lots of training, lots of test baking goin’ on!!

I had half a muffin for a mid-morning snack. With all the adrenaline going on, I’m hungrier! Or maybe just the tempting muffins were calling me.

I biked in today with no problems!! WOOOO!!! <3 my bike. Once I arrived I had to zip back up to the City Revenue Office for some sales tax paperwork.

Life lesson: small towns rule. Had I had to do that in Charlotte I probably still would be in some waiting room. Today I walked in, spoke directly with the Commissioner of the Revenue himself and was hand-given everything I needed. <3 you Cville!

We’ve been running around the store doing this and that at high speed. Time is crunching!!

Janet brought in some snacks for employee nibbling. Lots of owner nibbling too! These Oat Bran stix were good!

Just broke for a quick lunch before the all-afternoon customer service training starts. Wheeee!

I brought in a salad from the garden today to balance in all the meals out this week.

Greens, carrots, radishes, green pepper, honey, olive oil, avocado, and leftover relleno pepper!!

I’m sure I’ll nibble on a cookie after this for a palate cleansing dessert

    I buy those sesame sticks from the Bulk Barn all the time. I didn’t realize they were made with oat bran! Score!

    Also, on a scale of 1-10 how excited are you for the big opening? I’m excited and I don’t live anywhere near Charlottesville!

    THAT right there is 100% why small towns do rock. Things like that are a bureaucratic nightmare in most any situation or town…and the bigger the city, the worst it usually is.

    Love that you have the personal connection and small town service thing going on!

    And those oat bran sticks…I used to go to town on O.B.Sticks. I think I need those again! 🙂

      Kath, Maybe when things settle down a little bit, you can write a note to the Commissioner’s superior… it might go a long way for him to have in his personnel file if he is looking at a promotion sometime in the future. People are always quick to complain, but it sure is nice to send Kudos now and again! 🙂

    Oh my gosh. It truly is a real bakery. I remember when I saw you for the first time, I thought–wow, there really was a baby in there.

    The muffins look fabulous! Are you considering mini-muffins? It’s more work, but sometimes one muffin is a bit much for one sitting, and I’d rather try a few different flavors that settle on one.

    Are all your breads shaped like, well, regular loaves? The GH in Anchorage (AK) does all its breads as round loaves… just wondering if the shape is a local choice. It’s really fun following all that goes into the business. I’m excited for you!

      We are going to do maybe 70% rounds, 30% toasters.

        Ours does mostly round too but I like the toasters. Is there a benefit to the round ones? I find them harder to cut into a reasonable (and equitible…which is important with 3 little girls) size/shape. Maybe I’m just uneducated on how to cut it…

    Can’t wait to see the pics from the opening, wish I could visit the bakery in person! I haven’t been keeping up with my fave blogs over the past few months, have you done a post on the full story of the bakery? I always love reading how people put their dreams into action and get things done from beginning to end (or in this case, opening day!)

    Do you have bike racks at the store? As a fellow cyclists (we sold both our cars and only use our legs or bikes to get around!), I find that so many places claim to promote healthy living but then forget bike racks and only have a parking lot. As you know, biking is a MUCH healthier living option for both the individual and the environment.
