It’s A Brick. House.

Overnight pumpkin oats in a jar – minus the nut butter. Just an empty ole jar. I missed the sticky sides! But I made up for it with buckwheat crunch.

The Mix
  • 1/3 cup oats
  • 1/3 cup plain yogurt
  • 1/3 cup milk
  • 1/3 cup pumpkin!
  • 1 tbsp chia seeds
  • Pinch salt
  • Splash vanilla
  • Half banana
  • 1 tbsp raisins

This AM: Lots of granola!

[OK, ok, I’ll admit I added a scoop of peanut butter halfway through because I missed it so much!]

Matt and I are biking to the farmer’s market, then getting some kind of exercise.. it’s only 48* outside!

        I will have to make them that way tomorrow to try!

        I decided whenever you and Matt open Great Harvest you should make it unqiue and have an oatmeal bar where people could get all of your unique toppings and ideas! That would be a big hit!

    Aw, I’m so sad. I looked everywhere yesterday for pumpkin and no find. So instead, I have oatmeal w/ fresh off the tree mango, dried pineapple and almonds. Tastey, but not Fallish (but it’s freakin hot here in FL!). I think I’ll have to indulge in a pumpkin beer later 🙂

    *laughs* I saw that first photo and thought “wow, I wonder what’s going on with the light there? The oats look so yellow!” As an Australian without access to canned squash and pumpkin, I keep forgetting that Autumn in America means pumpkin oats that I have to be envious of! 😛

    It was 42 degrees here yesterday morning, but I live in Alaska, so that’s to be expected. However, I’m surprised it is that cool where you live! I’m sure it will warm up a lot more where you live!

    48 degrees?!?! Shut the front door! I just finished running 15 miles in 83 degree Atlanta heat. Oh, Lordy, I wish it would have been 48 degrees. Heck! I would have taken 68 degrees! 😉

    I about freaked out when I saw your breakfast. As I’m sitting here, I am eating what looks to be almost the same exact thing and it’s in the same size mason jar! I didn’t make overnight oats though but a layered yogurt + banana + pumpkin + spices + buckwheat + chia + walnut butter etc. Then I stirred it all up so it looks like a big orange mess…just like yours! Have you had walnut butter before? I made some the other day with cinnamon, vanilla + honey. It doesn’t get super smooth and creamy like some of the nut butters but it has this dough like consistency and awesome flavor I think you would love 🙂

    So jealous of your weather/farmer’s market right now! Cooler temps would make my run so much better today seeing as I slept in too late and its getting warmer by the minute.

    I know you moved out of Charlotte, but I am seriously considering UNC Charlotte for grad school and I was wondering if you have any insight into what neighborhood/area I should move to. I’m looking to be relatively close to school and it would be nice to have a good walking community. Thanks so much for any advice!!

      That’s a tough question. I’d recommend Dilworth, but it’s pricey and would involve a commute. The whole Lake Norman area (where I went to college) is really nice, but the traffic going north during rush hour can be a beast. I’d be happy to hash it out on the phone or G-chat sometime when you get more research done?

    Beautiful pictures! I am also a pumpkin fanatic. I love all things fall, actually. I am loving this weather! You inspired me to finally open up my monster can of Libby’s that I had been saving . . .
    And I can’t wait to hear/read which pumpkin ales are best at the festival! (Dogfish’s was kinda dissapointing to me, and Blue Moon’s was just like regular beer to me . . .).

    PS: Re: your “animals” post, there are BABY lion cubs at the National zoo. You have to see them!
