Ingredientz

Morning from the KERF house. Glad to be here!

The coffee’s strong –

IMG_6945 (640x427)

The muffins are wholesome

IMG_6948 (640x427)

And the oatmeal is thick n creamy

IMG_6953 (640x427)

I opened up the Peanut Flour to have today. I’ve had PB2 before and this is very similar. I do not intend to use this as a peanut butter replacer – it doesn’t really taste like PB to me! But I do love stirring this into yogurt and making the occasional sauce or dip with it. Think of it as a fun ingredient for your kitchen!

IMG_6939 (640x427)

[Emily did a great post on peanut flours where you can learn all about it and ask questions

Smile this !
]

I stirred mine up with water (we are SO out of milk!) and added some kosher salt like Emily suggested and a splash of vanilla. I thought the flavor was just OK. It tasted a bit chalky to me.

IMG_6947 (640x427)

Muffin madness!

IMG_6951 (640x427)

The Oat Mix

  • Half hot cereal, half oats
  • Milk + water
  • Half banana
  • Half tbsp chia seeds
  • Vanilla, salt, cinnamon pinches
  • Muffin
  • PB Flour sauce
  • TJs Pumpkin butter
  • A sprinkle of toffee cookie edges

IMG_6958 (640x427)

IMG_6957 (640x427)

The good stuff.

IMG_6960 (640x427)

IMG_6952 (640x427)

I’ve got a lot of stuff to do around the house today, and tomorrow will get a move on on my computer + blog related tasks.

Have a great Wednesday!

I’ve only added peanut flour to baked goods — I’ve never made “peanut sauce” or anything. At first I was bummed that it comes in those teeny bags, but I barely use it, so now I’m happy it wasn’t a 5 lb bag 🙂

I feel the same way about the Peanut Butter flour when i mixed it in my oatmeal, I couldn’t really taste it. It made my oats thicker and creamier though.

I use PB flour for baking and have a really good Peanut Butter chocolate chip recipe that I tried, they were chewy, dense and delicous cookies 🙂

I appreciate the idea of experimenting with new, fun foods but am not inclined to purchasing fake tasting peanut butter to save a few calories or grams of fat. A healthier approach might be to consume reasonable portions of the real thing and relish every bite.

Hey Kath! Nothing like a hot cup of coffee 🙂 I love the peanut flour but I don’t use it as a PB sub on its own. I’ve used it in a few recipes and really really like the outcome. Few suggestions:

    Cookies: http://itzyskitchen.blogspot.com/2010/09/peanut-butter-flour-chocolate-chip.html

    Bars: http://itzyskitchen.blogspot.com/2010/09/oatmeal-peanut-butter-flour-chocolate.html

I also used it in protein pancakes (using Julie Go Leans recipe).

Good stuff! Have a good day

It looks like you had the makings for a lovely morning! I hope it was.

I have a question for you—I noticed that you didn’t include measurements for your oatmeal mix (which I think is a good thing), but I’m curious if you DO measure the ingredients. You did say “Half tbsp chia seeds” so I assume you did measure that. But do you usually measure the other stuff, or eyeball it?

Oh, and Kodiak mixes finally showed up in my grocery store. I picked up a box to try, and I’m glad I did! They should give you a commission. 😉

      Good question 🙂

I usually measure the oats, milk, water with a measuring cup to get the proportions correct for cooking. But all the other ingredients are just dumped in/on to taste. I usually write “half a tbsp chia seeds” because I dump in about a tbsp for both Matt and me. So most of it is eyeballed.

I don’t understand why there needs to be a substitute for peanut butter; I recognize that you were not advocating it here, but noticed it on Emily’s post. She made a comment that when she was in weight loss she chose a substitute.

I think real peanut butter can SO be a part of a healthy lifestyle, whether you are in a weight loss mode or maintenance stage. Real food!
