I Am Lazy

Most of my lunches are packed with laziness in mind!!

Case in point: a luscious salad is really just a handful of pre-washed lettuce, topped with a few pre-chopped veggies, leftovers in a drizzle of balsamic and honey and sea salt.

I was too lazy to make a sandwich. Too lazy to create a salad. Too lazy to wash + chop on a school night. Too lazy to make a salad dress. Yet somehow, this salad works. And is probably delicious as I’m eating it right now!

Yogurts are the best for lunches because you just plop them into the lunch box.

And a gooey slice of CinnaRaisinWalnut. Too lazy to put anything on it – just plopped it into a bag!

    I’m always afraid to pack yogurts in my lunch… every time I seem to do it, the container pops open and I have a lunchbag full of yogurt!

    I like to take leftovers and just plop them onto a bed of a baby spinach. Lunch doesn’t get any more quick than that!

      I’m with you all the way on the leftovers — I scoop the leftover-of-the-day into a Pyrex container for easy (plastic-free) reheating at work. I tend to panic when our leftover stores start running low 😉 Putting them on top of a bed of spinach sounds like a great way to sneak a bit more veg into the meal.

    Hurray for lazy meals! My favourite lazy meal is… snacks. 😉 I just snack here and there, and before I know it I’m full. 😛 Probably not the most balanced, but most satisfying I think (maybe because of the variety? ;))

    I feel like every meal I make is lazyness and I just throw things in the microwave or put veggies on lettuce and call it a salad. Haste makes waste; enjoy a little downtime!

    i’m flying DELTA this weekend — after all the hype, do you know if they still give you biscoff cookies?
    p.s.:your lazy lunch is still better than mine — i eat more or less the same exact thing for breakfast/lunch everyday, only concentrate my energies on variety/planning on dinners…

    Working hard! However, my lunch is pretty lazy: leftover roasted veggies from Monday night topped with a hunk of feta cheese, plus some chunks of watermelon. I don’t even need to lift a spoon. 🙂

    I must be always lazy! My lunches are leftovers almost everyday. Today was a black bean burger (like in your recipes!), parmesan-y orzo, and baked sweet potato wedges 😀

    I think the fact that you actually take the time to pack a healthy lunch instead of just hitting the McDonald’s drive through makes you a lot less lazy than most Americans! A coworker just told me today that she buys frozen peanut butter and jelly sandwiches….I feel that really brings laziness to a new level!

      Yeah–I couldn’t believe the frozen pb & j sandwiches when I first saw them at the grocery store. If you don’t have time to slap together a sandwich, you really need to reevaluate your priorities.

    You could say I’m working hard….just not on food! I literally just put a ton of fruit and a few crackers in my bag for lunch. Super low maintenance.

    i never think of packing yogurt b/c i don’t want to keep it cool with an ice pack. do you even bother or do you just eat it warm?

      Room temp doesn’t bother me too much, but I have been putting an ice pack in there now that it’s summer and it works perfectly.

    Lazy? I think not. How about Work-free lunch? I would venture to say that all of us here on your blog work hard to maintain our healthy lifestyles. A Work-free lunch once in awhile is a reward and in your case, an especially delicious one;)

    Hardly working…but still you are eating halthy. So, that’s good no matter wheter you are working or not. Healthy eating is what is important.
