Hunka Hunka

Hi!

I’m all yogaed out and my belly’s now full. Ready to call it a day!

Winding back……zipppppppppppp

Afternoon snack was a Vega Vibrancy bar. Love these. Sad that this is my last green one. I ate him during my pre-yoga walk with Emily. After Tanner and I spent 20 minutes nerding it up talking about Google, Gmail and iPhone apps for nerds.

Emily and I got in 30 minutes of talking walking. Today was her last day of culinary school and she heads to the BEACH this weekend. SO JEALOUS!

Yoga – with Sarah – was awesome. Hard work today! The opening flow – which we did twice on each side – nearly killed me. And then we did some killer bootcamp abs to end the hard part before settling down into pigeon, frog and savasana. <3 yoga. Seriously, I used to hate it. You must give hot vinyasa a try! The Floridians are even now hooked!

I decided to shower AT yoga today. Thanks to Tanner for putting in privacy shields on the shower doors so you are not giving a show to the changing room! I always hate driving home sopping wet (hungry) and then having to shower once I’m home. This new method worked well! I did have to borrow a towel though, and hate the thought of dirtying up one of my own towels for a quick rinse once a week (twice if you count my post-swim showers).

Man I am babbling!

DINNER: Thursdays are now Egg Nights!

Quinoa Fried "Rice"

  • 5 mushrooms, chopped
  • 1/2 a zucchini, chopped
  • 1/4 a red pepper, chopped
  • Garlic Gold Herbed Nuggets (sprinkle)
  • Rice wine vinegar (Splash)
  • Tamari (splash)
  • Agave (drizzle)
  • 1 egg
  • ~1/2 a cup cooked quinoa

Cooked veggies in cooking spray. Added flavorings. Added egg. Scrambled. Stirred in quinoa.

Served with this hunka hunka Dakota bread!

IMG_3132 (640x427)

You know how muffin tops are the best to eat? The same goes for Dakota – eating it hunk-style means you get a hellova lotta seeds in one bite!

Dessert = 3 Biscoff cookies! And Glee!

Gotta run – the world is moving on without me!

Yum, what a great combo of flavors! I’ve had some quinoa sitting in my pantry for a while now that I probably need to use soon.

I love the idea of using quinoa for fried rice. I never thought to do that with other grains than rice but I’m sure it would work with wheat berries, barley, bulgur, etc. Great idea!

I’ve been addicted to hot vinyasa the past few months. I look forward to it so much! Since it’s so easy to find cheap classes in New York, I don’t feel “guilty” for going more than once a week.

So impressed with this simple recipe! And I can’t believe how yoga has taken off among all the runners in the blog world. I wish I could find a good studio in my area. Hopefully once I move into Philly!
