Huckleberries + Lentils

I spent the afternoon studying and Huck Finn spent it napping and drinking mint juleps!

He deserved it, though, for getting up at 3 and working a 12 hour shift

this !

I found myself digging in the Kashi cracker box around 4pm. I was procrastinating studying!! (Also a little hungry) I had a serving or so – straight from the box. I forgot how delicious they are!

Dinner was another hit: Melting Pot Lentil Stew.

Sippin’ some mint julep while I cooked 😎

I had a slice of buttered rye on the side –

And HE had two butter sandwiches!! I swear he lives on bread. He’ll come home from work and not want lunch and I’ll ask him what he ate all day: bread! I often have to remind him there are nutrients in fruits and veggies that he needs too 😉

I actually didn’t quite finish my soup – the bread was tastier and I left a 1/3 cup or so of lentils on the bottom (ate out all the good stuff.) I was full and trying to eat intuitively!

We are going to watch an Office episode online and then I am getting back to studying. Tomorrow is my long day in addition to the back-to-back tests, but once I chug through it I’ll have Thursday to recover. I’d MUCH rather cram a ton into one day and have a day off than maintain a medium load everyday.

    Lentils sound so good!
    Fresh bread is VERY hard to resist!! I would eat it all day too if I was around it so much 🙂

    Lentils and sweet potatoes are a great combination, I’ve discovered. I use red lentils and they get kinda mushy, but that’s what I have!

    Aww, that picture of him in the hammock is so sweet! The stew looks great too. I’ll have to try that recipe next time my hubs is out of town as he won’t eat lentils. Boo on him!

    I’m the same way! I’d rather spend a full afternoon studying than take 1 hour each day and do it. It’s nice to have a completely FREE day 🙂

    I agree with what you said about having a hard day and then a day off, rather than a couple of medium days. I love to do that too! This semester I got all my labs on one day – ouch, but it’s so nice to have thursday with nearly nothing to do!

    Hi everyone-
    I’m so jealous of all the delish food you guys have down South! In Canada we have no TJs and only a few Whole Foods! SO I was wondering if anyone (Kath or commenters) would want to do a bar exchange with me…? I LOVE Kashi GoLEAN Crunchy and Roll bars (oh, and Luna bars!), but sadly have none here… However, we have wide access to every flavour of Larabars!     I totally understand the husband’s obsession. I could eat bread all the time, but I have to remind myself I should eat other things too. I can’t imagine working in a bakery.

    Bread is so good – I don’t blame the husband one bit 🙂

    I’m also envious of how relaxed he looks in that swing – I would kill for an afternoon like that! But I wouldn’t kill for a 12-hour work day… That’s a long time!
