(Hidden) Top This!

I got lots of sleep last night

Ahhhhh. We woke up around 8 and hit the gym inbetween rain showers by bike. The husband is working all day today so I knew we had to do gym –> breakfast. I had a big glass of H20 and about 5 Quaker Squares before we left. At the gym I did 30 minutes on the Stairs plus some stretching (my leggins are a little sore from yesterday’s jumping!) before we biked home – to get caught in a huge rainshower! We were SOAKED when we got home. And now look at the weather:

I’m not sure if this sky is completely rain free now because some clouds have blown in, but I’ll take a little sun over no sun!

This morning I made my recipe for Quaker’s “Top This!” Oatmeal Bowl Contest….so I can’t show you what’s inside! What I can tell you is that it was under 400 calories, less than 1g of saturated fat, less than 12g added sugar (A HUGE CHALLENGE!), less than 480 mg of sodium, less than 20 mg of cholesterol and over 3 g of fiber – and included a 3/4 cup of dry oats!! I had NO trouble finishing the bowl and the combo I used was absolutely delicious. You’ll find out in time what it was :mrgreen: I’ve got one other idea I might try out too. Quaker is judging (blindly) on taste, convenience and creativity. While I feel confident about taste and creativity, it’s the convenience factor that will be hard to win over because you can’t just use cinnamon and raisins in a big contest like this.

I SO wish I could show you the bowl top – it was not only delicious but was pretty to look at too 🙂

I also had 2 cups of coffee…..I’m all jittery now. I had too much, but I drank one while I was cooking.

Today’s agenda includes my Micro final project, studying for Micro, Organic Lab, laundry and a party tonight. Since I finished breakfast at 11, I’m not sure what lunch will entail, but I think I’m going to try out another mystery recipe for my development project, so it’s going to be an all-white day!

    Hey Kath! Kind of random and I know that you are doing the Thanksgiving challenge, but I just wanted to let you know that recently, when I was at Harris Teeter, I happened upon their hummus. It was actually very good, in my opinion. You should definitely give it a try sometime. Hope you are doing well and hope school is going well for you too!!

    I made pumpkin pancakes this morning – they turned out AMAZING and I even forgot to put the egg in – each pancake only 99 calories!

    How are you!? What flavor did you try?

    Re. Quaker recipe,
    I’m not sure when I’ll be able to unveil, but they are due Nov. 24 and Quaker is announcing the winner (who wins a TRIP TO COLORADO!!) around Dec. 5th.

    Lots of things 😥 Like if you used vanilla soy milk, which I think has cane sugar in the ingredient list, that would count. It was HARD to figure out a recipe! That is by far the hardest part of recipe development: obeying the rules. While I always keep my recipes mostly healthy and do consider a balance of protein, fat, fiber, etc., I never have to follow anyone else’s rules in my own kitchen. So when I come up with ideas for developing a recipe, it sucks to go plug it into NutritionData.com and find out I’m waaay over the sugar or fat required.
