Pumpkin pancakes again. Can’t get enough!!

I slept in as long as I could this morning (till 8) but Matt is still asleep! Good for him, but his pancakes are now cold! [Edited to add – it’s not 10am and he’s up and hungry!!]

These are made from the Great Harvest pancake mix along with half a cup of pumpkin and salted almonds with sea salt sprinkled on the wet side before flipping. Topped with Biscoff, chia seeds and coconut = fabulous!

We had plans for some hiking today, but it’s raining. The forecast was all sun a few days ago. Boo!

    I know I’ve been cooped up all weekend with the rain, when I usually like to get in a hike or a bike ride. It’s been nice though to just cook, clean, and accomplish some stuff. Have a wonderful Sunday!

    Look great! I am having an Pumpkin OIAJ today-can’t wait. Curious how you decided to store your extra pumpkin? I am using canning jars more and more these days. I have one in the fridge with leftover pumpkin in it (with the plastic screw on lids-love those) and am thinking of trying it in the freezer too.

    Pumpkin pancakes are the best! I bought a bulk supply of sweet potatoes from costco the other day and I’m wondering if I could cook and mash those and use like I normally use pumpkin. Have you ever tried that?

    Pumpkin pancakes are addicting!! It’s like, once Fall is here, you’re officially given permission to eat them for breakfast, lunch, and dinner. I’m glad to see I’m not the only one under their spell!

    Oh, and just FYI- wordpress turned your 8 in parentheses (in reference to your sleep-in time) into a little dude with sunglasses, haha. Is there a way to stop it doing that, I wonder?

    Those pancakes look absolutely delicious. I have yet to find the time to try this recipe (law school ruins all cooking attempts haha) but this is on the to-do list for this weekend.

    So yummy! You can never have too much pumpkin!
