Girls Gone Wild For Blue Apron

This post is sponsored by Blue Apron

Blue Apron Summer Dinner

I am so very thankful for my girlfriends. I don’t know what I would do without them! They have helped me so much during this year of transition, and we all support and love each other every way we can. And most importantly we always laugh and have a blast when we’re together. I owed thank yous to Gaby, Sarah, and Lauren, so when a Blue Apron box came to my doorstep, I knew I wanted to share it with them.

So on a dark and stormy night, I lit some candles, set the table, and spent a few hours preparing for the special dinner.

Unlike some of the other meal services out there, Blue Apron sends the ingredients and recipes right to your doorstep. There is no trip to the grocery store required!! Everything comes in exactly the right proportions, so there is no waste from unused ingredients. You have your choice of a 2-Person plan or a Family plan, and there’s no commitment – you can skip or cancel the service at any time. Blue Apron is working towards a sustainable food system and a better package recycling program. Try it for yourself! The first 20 readers to sign up get 3 free meals on their first Blue Apron order.

My favorite way to use Blue Apron is for parties like this one and times when I want to spend time in the kitchen making a special meal. All meals can be prepared in 40 minutes or less, and doing both at once is efficient!

The two meals I made were great for sharing – Chicken Tinga Tacos with Summer Squash & Tomato Salsa, and Eggplant & Rigatoni Pasta Puttanesca with Capers, Cherry Tomatoes & Cucumber Salad.

I also set out some hors d’oeuvres

And of course some wine!

The dishes were a big hit. We all commented that not only were they delicious, they tasted healthy too.

Loved the tacos!!

They had chicken, radishes, avocado, cilantro, and garnish.

Tacos all around!

The pasta was great too. Eggplant is one of my summer favorites!

And this cucumber salad totally exceeded expectations in flavor! It was so simple that I was skeptical, but the salt and pepper cucumbers were so crunchy – like pickles!

We shared such a special evening of girl time. Can’t wait to do it again!

Looks delicious, and I like seeing one of your gram’s white linens peeking through.

Oh, weird! What are the odds of that?! I finished mine less than a week ago, but based it on something she did in 2013. Great minds!

The cucumbers sound amazing! I have been on the fence about whether or not to try Blue Apron, but after reading this, I might have to just go for it.
