No, not me – our Clinical class!! We discussed a handful of upper and lower GI disorders, which included plenty of poop talk! Lots of laughing ensued
This afternoon’s snack included a grapefruit (which I devoured in about 60 seconds!) and a LaraBar, which I took 30 minutes to eat slowly and enjoy.
I also had 2 of Kelsey’s carrots with hummus and a bite of a TJ’s fruit stick thing. Snacks were the perfect filling combo to stretch me until 8:30 dinnertime.
I actually wasn’t that hungry, but when I started to put together this dinner, I kept piling on the ingredients and managed to eat every morsel.
I found these leftovers in my fridge and layered them into this:
- 1/3 cup quinoa
- 1/3 cup garbanzo beans
- 1/2 cup broccoli
- 4 grilled eggplants
- 1/4 cup feta
- 1 tbsp raisins
- Bed of romaine
= all tossed in a “dressing” of 1/2 a lemon + 2 heaping tsp tahini. Plus a dollop of greek yogurt on top.
TV dinner night!
I’m so tired (for sitting and thinking all day) and can’t wait to go read in bed for a bit! I’ve got a long to-do list full of small projects for tomorrow so I’m waking up early to get started.

Great looking Salad.
Glad to hear class went well 🙂
Oh gosh, we studied GI stuff a month or two ago and we all just sat there thinking, please don’t let this happen to us! A J pouch sounds about as bad as it gets. And dumping syndrome?!? Err….
Hehe, who doesn’t love a good poop talk ;)?
What a delightful combination of food!
OH what a perfect title!!
I started to laugh at the title!!! I really love poop talk 🙂
Another AMAZING Kath-salad! Looks SO yummy! Now I have even more salad ideas 🙂
HAHA! That must have been an interesting class! I can only imagine the topics and stories that stemmed from that one.
Glad to hear you’re catching up on your reading! It’s such a great way to relax and unwind from a long day.
haya (living and learning) says
that’s a very orange-y snack!
mmm dinner looks yum. sometimes throwing random fridge leftovers into a bowl results in serendipity.
poop is somehow always funny. even when you’re an adult and in a classroom studying serious stuff.

I can’t believe you manage to make LARA bar last for 30 minutes! I’m lucky if I can keep it for 10, I just get so excited!
delish dinner! Love the flavors!
haha that’s a crazy smiley face after the poop talk!
ahhh two of my favorite things.. grapefruit and cashew cookie larabar!
I like to pull the larabar apart into little bites as I am working to make it last longer. Somehow they also make me very thirsty and I drink lots of water on the days I eat one. yum yum yum.
That salad looks absolutely to die for. And not a little preventative of said GI issues, whether it personally applies or not!

o don’t worry miss RD to be, there will be plenty more poop talk where that came from!
melissa (fitnessnyc) says
that seems like a very good combo, giada delaurentiis-esque!
Sounds like an “interesting” class.

Quinoa is my fave grain! And when my nutritionista ladies and I get together- all we talk about is poop. I was on the radio on Friday talking about detox and more poop talk. I forget how most people, in the regular world, don’t talk publicly about this.
I just love GI disorders. its so weird after you learn about them – I have a friend with ulcerative colitis – i felt really bad for how excited I got when he first told me. Its like having your own little case study before your eyes!
tasty treats you have there!
Oooo totally love it!
Green goddess!! The best kind of tv dinner 🙂
Sarah (lovINmytummy) says
My afternoon had plenty of poop talk as well, though I’m sure mine was not nearly as educational as yours.

30 min for a LaraBar is impressive…I always want to pop the whole thing down in a few bites!
I just got a chance to see that lovely lunch but the champ is definitely that awesome dinner salad you created. What a perfect way to show that salads don’t have to be just leafy and boring!
P.s. I get so upset when I cook my veggies (i.e. eggplant) and they SHRINK!!! I like my veggies big. 😛
Tyler (Raspberry Runner) says
gah i hate all the GI disorders…sorry just got done studying that for my test tomorrow morning!
incredible looking salad!
Moran (The Running Addict) says
I am going to try quinoa for the first time this weekend! Hope it will turn out as good as yours does
Leah @ Simply Fabulous Now says
My favourite Larabar! Yum!!!

We all need a relaxing night in front of the TV once in awhile – hope your enjoyed your night!
Well as you know, I have Crohn’s Disease – so if you need more information, you know who to ask, haha 😉
I’ve never tried Greek yogurt on salad. Looks delicious!
Who doesn’t giggle at poop talk?! Having 4 little brothers…I’ve learned to live with it. =)
I just did a case study on Crohn’s. What a tough disease to live with. Hope you’re doing better than my “patient” was 🙁

We did GI the first half of the semester and had to sit through a lecture like that too!!!
GI stuff huh? Maybe you can help me get rid of my viral infection before my marathon on Sunday. :/
