Fun On The Patio!!

Shrimp, Roasted Red Pepper + Feta Pasta

Tonight was an Ellie Krieger-inspired recipe and boy was it heaven in a bowl!

Here’s our combo for 2 servings:

  • 4 oz each angel hair, cooked
  • 1 clove garlic
  • 10 thawed and peeled frozen raw shrimp
  • 1/3 a green bell pepper
  • 1 jar roasted red peppers
  • 1 block President Feta Cheese (I used the fat-free Tomato Basil that I loved last time I got feta)
  • 1/4 a cup of Imagine Vegetable Stock
  • Red pepper flakes to taste

This meal literally came together in about 10 minutes. Get pasta cooking. Heat a skillet and sautee 1-2 garlic cloves along with the drained red peppers until nice and hot. Pour into blender along with veggie broth and 2/3 of the feta. Blend.

 

Here’s my beautiful stick blender in the container it came with for smoothies and sauces. SO much easier to clean than a blender and food processor.

Then we sauteed the shrimp and green peppers, drained the pasta, and tossed it all together with the remaining 1/3 block crumbled feta and some red pepper flakes for heat. Yum! There was SO much flavor for so few ingredients! And the sauce was the perfect consistency.

We ate out on the patio tonight, which was so fun! We’re hoping to slate it one day and hopefully get a dining set this summer if funds allow.

Each serving was 350 kcal, 5 grams fiber and 35 kcal.

In celebration of the weekend and working so hard this week, we opened a bottle of wine. Here’s me posing with my glass 8)

Note that Ellie’s recipe was 470 kcal per serving – so was mine with shrimp and WINE! I think omitting 240 kcal worth of olive oil helped 🙂

 

After dinner we walked to Blockbuster to rent Atonement. It was about 35 minutes round trip and such a pretty night.

 

AND – I FINISHED MY STATS PROJECT!!! I wasn’t expecting to, but I was on a roll this afternoon and didn’t stop until it was done (I even had to teach myself the last topic to include). So no Trader Joe’s, no walking, no snack even – just me and getting it done. I wanted a snack around 4:30 but I didn’t want to stop and think about what to have, so I just kept going. But my lunch did a great job holding me over too. I’m SO happy right now to be done with my work that I can relax all weekend with literally no assignments hanging over me.

    So beautiful! Next time you guys should set up the camera with the timer to take a picture of the two lovebirds together! We’d all love that! And your dinner looks fabulous! I love Feta, but sometimes I find that it’s SO overbearingly salty. Any tricks on how to make sure the salt doesn’t overpower the rest of the dish?

    Haha, I LOVE the photographs of you and Matt – too fun!! You MORE than deserve to celebrate, especially since you finished that stats project!! Hooray!!

    I love to see pictures like these in addition to the food ones! It really emphasizes the fact that there’s way more to life than just food. It’s so nice to be able to sit outside and relax over a nice meal. I can’t wait until the snow melts so that I can follow your lead, but for now, I’ll just enjoy looking at your photos 🙂

    you’ll have to tell us how you like the movie. i saw it and it was visually stunning and very, very sad. but in the end, i was left wondering what the point was, you know?

    cute pics! Your patio looks so inviting – it must be great in the summer especially with your pretty flowers. 🙂

    I can’t comment on your dinner, because unfortunately, I REALLY dislike peppers. I would consider leaving them out, but it seems like it’s the star of the recipe, right? But it does look yummy – initially, I thought it was a tomato based sauce.

    Let us know how you liked Atonement.

    I thought it was beautiful – but it left me feeling so sad.

    I loved that green dress Keira Knightley wore. And I really like that actor…what’s his name?….oh, James McAvoy I think? He has a sweet face.

    What a perfect little dinner outside. We’re having great weather here too, it went up to 85 today! Those stick blenders are incredible, I got one for my mom for Christmas last year and it is her new favorite kitchen appliance.

    I love that cheese…I haven’t been able to find it the last few times I went shopping. I think I will definitely have to find some to make that recipe within the next few days!

    I’ve got to get myself one of those stick blenders. Everytime I use my blender, I end up having to shove some utensil into it to mix everything up several times. It’s also probably not as noisy and apartment-with-thin-walls friendly at 5am when I’m making a smoothie 🙂

    I saw Atonement a couple weeks ago, it was a little slow for me, but the end made it worth it.
    That dinner looks great, I’m gonna have to look it up in her book.
    Patio sets are SO expensive, I just don’t know why! I actually bought one a couple of years of ago at Kmart for like $180. Spending $700 would probably make me throw up! But, the chairs were horrible and had to be thrown away at the end of the summer. The table and umbrella survived, but I had to buy 6 new chairs! I got those on sale for $18 each, so at the end of it, it’s cost me like $300 and it’s all still crap! Sorry to rant, but I would advise you to buy the best you can afford, it only costs more in the long run. (You should have registered for a set! haha, I would have.) Oh and go to Costco.

    I love ellie krieger’s recipes they are all truly amazing. I also love her principles of always, sometimes, and rarely foods. I have loved every recipe I have tried of hers.
    I hope you enjoy atonement I loved the book!

    I agree on Atonement. Visually stunning but no real plot. A bit of a disapointment. I also loved the green dress though! Kath, what did you think?

    And I LOVE stick blenders! i got one for christmas and since then haven’t used my real blender once. it is fantastic!

    This tomato-basil brand isn’t nearly as salty as others I’ve had. Maybe because it’s fat-free? Maybe because there are other flavors? See if you can find it.

    We’re still watching, but I like it so far! The beginning was much better than the middle, which is sad and dragging. But I love the way it’s filmed.

    How funny – I made pasta with red pepper sauce for dinner last night, too! I pureed garlic and shallot in the food processor, warmed it and added a jar of roasted red peppers that I also chopped, then simmered it with red pepper flakes, dill, anchovy paste, and oregano. I served it with a sprinkled of toasted pine nuts and a slice of goat cheese on top.

    I haven’t seen Atonement yet, but I read the book ages ago and it’s SO GOOD. Really worth reading.

    i love the blog! you and your husband are so cute, and i love how much you enjoy your food and still eat healthy. i have more of a coment than a question…you are so small and petite and cute, and i know you said you are shorter. i am 5’6 (i think 4 inches taller if im remembering right) and 118-120 as well, but i look so much bigger than you! i guess everyone is built differently. i eat the same/less than you (just based on what i see in the blog). but i applaud you for being you and putting yourself out there! keep up the good work, you are a great role model.

    Thanks for your comment!! I think the reason I might look smaller is that I have pretty compact muscles and have always weighed 5-10 lbs more than others my height. That’d be my only guess!? But you’re right, apples to oranges 🙂
