Fruits Of The Season

It may be hot out, but that didn’t stop us from a hike! This morning I met Jessica and Genevieve for a welcome-to-Cville hike – both are new to town! We hiked the Monticello Trail up and back – probably just short of 4 miles. Thankfully it was shaded, but that didn’t mean I didn’t finish the hike drenched! I love that trail.

Morning ended and afternoon began with a delicious summery lunch

I made a tomato + cheese + hummus sandwich on Multigrain Sourdough with spinach and a drizzle of mustard and mayonnaise.

And then filled the rest of my plate with fruit!

    I made it to that trail last year and we left drenched because it started to DOWNPOUR on our way back to the car. Remember that one when the power went out, tree limbs came down and the streets were flooded? It’s a good thing I have cheese in my fridge because that cross section shot of the sandwich is firing up my craving for cheese!

    It is unbearably hot here. I cannot wait for the fall. I love summer but the heat this year is getting to me for some reason. I can’t imagine going for a hike! Lunch looks delicious. Makes me want a veggie sandwich!

    random question- how do you cut your peaches? i feel like the pit always sticks to mine and they get all weird and mushy when i try to get the pit out. especially if they’re at that nice soft ripe phase!

      I cut off the four “cheeks” and then the bottom – then eat around the pit!
