Friday Night With Blue Apron

I’m back with another duo of Blue Apron recipes to feature! This time I decided to share the love with my friends and took my big blue box over to Sarah’s house for a Friday night bonfire party. We had six for dinner, and so the two recipes combined were the perfect spread for a cozy autumn night. It was so easy for me to bring over the whole box knowing we had everything we needed to feed the crew.

The first recipe was for Cod Cakes & Roasted Potatoes with Coleslaw and Dijon Mayo. Everyone loved this take on fish in the cake form, and the coleslaw was a great alternative to a green salad. And the dijon mayo was good on everything!!!

Sarah and I did most of the prep while the kiddos were entertained in the playroom so we could cook off dinner easily at 6pm.

Our second recipe was a casserole – the perfect all-in-one meal for a crowd – Mexican Chicken & Rice Casserole. The prep was easy and it tasted great all together!

      Hahahahaha!!! That’s Lauren’s arm but I don’t remember what she was doing. Probably trying not to disrupt the photo.

    Thank you for sharing the information about Blue Apron’s holiday meal drive. We love Blue Apron but I didn’t realize they had this program going on for the holiday. I just logged in and donated our week of Thanksgiving to them instead. Appreciate you sharing!
