Fill Me With Food + Sun

My colleague gave me a tour of the whole place. MY is this next rotation going to be amazing – in the classic sense of the word. Eye-opening and interesting. So much to see and learn. I’m getting nervous! We walked all over the place for about an hour – it was quite a workout (always taking the stairs up and down 10 floors ๐Ÿ™‚ )

I just broke for lunch and am dining al fresco at my new favorite bench spot by the creek.

In The Lunchbox

My favorite lunch salad: spinach, peppers, cuc, and carrot with avocado (a tiny bit), a blob of homemade hummus and a drizzle of lemon olive oil and honey.

TASTES SO GOOD!! Raw vegetables used to make me gag (when I was in high school). Now I think they taste so sweet and incredibly delicious!! Palates do change.

And a mini Nuttzo sandwich on an end piece of Cinnamon Raisin Walnut ๐Ÿ™‚ Had this guy for dessert.

Have a wonderful afternoon! I’m planning to go out and enjoy more sunshine in the form of both a short run and walk when I get home!

    love that dressing combo! I always do lemon and olive oil, but I never think to add honey — great way to naturally sweeten things up!

    I always loved raw carrots and snowpeas as a kid, but when I first went to the US on exchange in 2007, I couldn’t believe you guys ate broccoli and cauliflower raw! It just tasted wrong to me… but as you say, palates change. I love those veggies raw now too!

    When I first started working at my last job at a University I was so excited for Spring I ate outside whenever I could. Eventually I started eating at my desk and working out at lunch. Now I work in an industrial park. ๐Ÿ™

    My palate has changed a lot since I was in high school too. I like things I never thought I would and some of the things I ate in high school disgust me now (which is a good thing!). It is beautiful, warm, and sunny here in MN too. I am going to be enjoying the weather with some outside studying this afternoon!

    Very cool that your next rotation is looking enjoyable!! I love how fresh and crisp your salad looks. Could not agree more with tastes changing over time. I used to HATE peas & peppers and now I love both. Hope you enjoy your run/walk.

    Isn’t it funny how palates change? I remember eating roast beef sandwiches in high school, but I haven’t eaten red meat since then! And I love grapefruits, but didn’t care for those back then either.
    Enjoy your sunshine – you’re so lucky! We’ve had (mostly pouring!) rain since Sunday. ๐Ÿ™

    I read somewhere that it takes “x” number of tries before a child will accept a new food. I wonder if that works for adults as well. So that if I don’t like something much at first and I keep trying it eventually I’d like it. In high school I didn’t eat any vegetables and now I like a lot of difffernt ones – raw and steamed.

    Have you conciously or unconciously reduced your portion sizes lately? Seems like lately your lunches are a tad smaller calorically.

    I have a habit of doing a calorie tally when I see a meal… I think yours used to average 500.. seems like they are hovering around 400 lately. I could be wrong though =)

    Just curious if your making changes.

    Good idea for a quick dessert… I’m glad you’re looking forward to your next rotation- I think you would make a great secondary care dietician- it is there where you can make such a difference to a patient’s life, and really motivate or reassure them and you seem to have such a great manner! Totally natural to feel daunted, I was when I first started I was terrified. Have a lovely afternoon ๐Ÿ˜‰

    Enjoy the sunshine! The weather has been absolutely miserable here in NYC the past two days. I’m looking forward to the sunshine that’s rumored to appear this weekend.

    Your to-go lunch salad is so similar to my favorite combo! I love the touch of lemon olive oil and honey, I must try that next time.

    Hey Kath, I was wondering if you could tell me what kind of lunchbox you carry in order to keep your meals nice and cold? I’ve tried a few that don’t seem to do the trick. I don’t have a fridge in my office and I need my food to stay cold for a good 6 hours. Any suggestions?
