A bit of life lately!

…with the season!
Did I get your attention! It’s fall y’all! My view is going to turn orange very fast. I’m hosting a pumpkin beer tasting (like the olden days) this weekend!
I’ve also brought back my very favorite oatmeal recipe: pumpkin cottage cheese. It’s so fluffy and filling!

Oatmeal all dressed up with peanut butter and apple spice granola.

I picked up a few of these Kodiak cake cups. I love all things Kodiak cakes! The kids like the cups for school mornings, and they are so quick and easy. Protein-packed too, per the package ; )

The Bardo
I enjoyed a lovely pumpkin spice latte at The Bardo. I also tried one of their vanilla pastries. The sparkling water and Biscoff were bonuses! Love the little extras.

It’s part coffee shop (Argentinian, like its neighbor, Noble!) and part art gallery.

Lunches
My favorite go-to salad: romaine, orange marmalade dressing, blue cheese, tomatoes, and smoked trout.

I made the kids quesadillas and decided to join in on the fun. I LOVE quesadillas! Mine had chicken, peppers, spinach, and cheese. (Like my new koozie!? Go Wildcats!)

We went back to Emmy Squared Pizza at Barracks Road and brought home extra slices as leftovers. Their deep-dish pizza is just so good!

Dinners
I’ve been roasting all the veggies this fall, and I combined roasted eggplant and tomatoes with protein rotini, tomato pesto, and mozzarella pearls for an easy weeknight dinner.

Loaded potato broccoli and cheese! This soup was a creative combination of a loaded baked potato soup to which I added broccoli to amp up the nutrition. With melted cheese on top, it was the perfect combo of my two favorite soups!

Coco & Eve
I have never tried self tanner before (or gotten a spray tan or gone to a tanning bed). Crazy right? Coco & Eve sent me these to try this winter. Please share any tips you have! I think the gradual lotion is going to be great. (I also really like their hydrating shampoo and conditioner.)

Here are my legs before summer ends – wearing the Albion Fit City Skirt!

Winter, I am not ready.
