Eyes Wide Shut

Yay for a great night of sleeping and a great day of napping!!

Foodblog-59

We were up at 7 today and met our new friend Kipton for a refreshing morning walk! One hour and about 3 miles later, we were off to a great start to the day.

Foodblog-7588

Post-walk breakfast was a bowl of greek yogurt topped with Autumn Spice Granola, banana, pumpkin butter and Barney Butter.

Foodblog-7587

And Shenandoah Joe’s Ethiopian Decaf – my new favorite coffee!!

Foodblog-7583

Today was stuff n save day at Old Navy and 40% off for those with Old Navy/GAP/Banana cards, so we braved the outing to look for a few items for me (a new fleece, 2 shirts and 2 pairs of “transitional” jeans to act as a placeholder between maternity jeans and my old lot. I was blessed with a great napping baby while I tried on a few things!

Foodblog-03

Sadly they were completely wiped out of 0-3 month boy baby clothes (they whole reason why I went – not my wardrobe!) but I did get this great shirt for Matt : )

Foodblog-7609

After we were home and one of us was fed and napping again in the swing (yay!), I acted fast to try to minimize lunch prep time so I could maximize eating time.

Foodblog-7597

This lunch took me literally 3 minutes to put together thanks to prep I did earlier: hard-boiled some eggs, chopped some veggies, spiced pecans and purchased pre-washed greens.

Baby kale, pepper, carrot (I can’t even describe how much I like carrots after a 9-month hiatus!), spiced pecans and Annie’s Woodstock dressing.

Foodblog-7594

Eggin’

Foodblog-7592

This pear looks sad, but I promise he was happy!

Foodblog-7596

And some AB + AB (almond + apple butter! This reminds me of algebra).

Foodblog-7591

This afternoon I was able to get some work done and then we did lots of playing!

Bath, jammies and a smile!

Foodblog-38-2

Storytime. The Hungry Caterpillar is likely my favorite children’s book. Because I love how after he eats all the junk food he has a “salad” the next day. That’s called balanced eating!

Foodblog-44-2

Late afternoon snack (plus a handful more mini wheats from the bag! I also put some in my nightstand for midnight feeding snacks. They are so fun to eat as a finger food).

Foodblog-7600

Matt was in charge of dinner while I fed Maze.

Foodblog-7604

We had a sautéed harmony of tofu and eggplant tossed in olive oil and pesto and then cooked in a pan.

Foodblog-7614

Along with another combo of green beans + shrooms in Worcestershire and garlic.

Foodblog-7615Foodblog-7613

And Cheddddar Garlic bread!!

Foodblog-7611

I need to be going because my eyes are nearly wide shut…

OH but one more thing – Happy Birthday Larbs!!!

Oh wow, that first picture of Mazen is unbelievably gorgeous. He is so adorable.

Your timing is perfect for getting your taste for carrots back – they’re so good this time of year when they’re fresh! Most of the year, carrots are kind of “filler” for me – we have them around and eat them sometimes, but they’re not that interesting. Then in the late summer and early fall when they’re in season at the farmer’s market – wow, carrots! They’re so good.

I have to say The Hungry Caterpillar, Where the Wild Things Are, The Giving Tree are all some of my favorite children’s books. Have a wonderful Thursday!

Wow, I actually consider The Very Hungry Caterpillar to have an unhealthy message (though it’s still a cute book.) Eating tons and tons of followed by a salad the next day = binging and restricting, not healthy eating, in my opinion.

    • KathEats says

I don’t think he was binging because he was unhealthy – he was hungry! But then he followed his hunger cues the next day. But maybe he could have satisfied his hunger with less junk food…

I’ve always looked at it like he’s a caterpillar and is just eating what he runs across because he’s hungry. I don’t think he meal planned. That’s the first book that Harper memorized. It’s so cute!

We always have a discussion when reading it to our toddler…I say “0h he ate salami, do we eat salami?” and my toddler says, “no we don’t eat anything that has a mother!” (We are vegetarian.) And it is one of our favorite books. it can still be used as a springboard to discuss eating habits and why we do or do not eat some of those things. I also focus on the fact that the caterpillar’s belly hurts after he eats all that food.
